Ham Roll Ups II

Spinach Deviled Eggs

Yum! I made these for a party and the guests raved over them. I've made them once since then for another party and they got rave reviews as well. Both times, they were all gone! EGG-cellent recipie and a good twist on a tired favorite!

Chocolate Chip Banana Bread II

My kids wolfed this down... my husband has declared no other banana bread will be made in this house unless it's this one. Yeah, they liked it :) The only thing I changed is I used baking soda instead of powder, because I was out :)

Beets with Onion and Cumin

I love beets. Seriously. I know that makes me weird, but that's okay. My husband doesn't like them, I usually just boil and season. So I go on a quest to find something that he might like... he said they were "okay" but my 4 year old ate two large helpings! We didn't have tomatoes so I substituted tomato sauce and I didn't have cumin seeds so I used the stuff in the jar. Overall, I think it was good, I think it would've been better with fresh tomatoes, but it was a keeper. I put some of the sauce over my oregano chicken I made that same night and it was devine!

Grilled Radishes

Okay, I admit it. I don't like radishes. In fact, when my produce delivery service delivered these this week I cringed inwardly. BUT I'd only had them raw on a salad so off I went looking for a way to cook them... and found... THIS. I was amazed.. I like radishes now :) The garlic is just great... yum! Even my veggie-scared husband liked them! The only thing I did differently is that I didn't have time to do the grill packet thing, so I pan-grilled/fried them on the stove. I give it a 4 only because my son didn't like it ;)

Sweet-Potato Muffins

Yum! Finally a way to get my kids to eat sweet potatoes! I left out the nuts, added some milk and cooked them for 15 extra minutes, they were perfect and my kids think they are cupcakes :) Surprisingly sweet and taste great!

Pan-Poached Alaskan Salmon Piccata

OH MY GOSH. This was incredible. My husband and I are still talking about how wonderful this one 2 days later. I would make it again. It took much longer to cook for me, but we had large salmon steaks. The only thing I did differt is I didn't have boullion, so I used some chicken seasoning. It was so so so so great!

Sugar Cookie Icing

I'm giving this a 3 because I see so many peopled like this one... I'm not sure what I did wrong, I followed the directions to the letter. The icing was so gooey, it was nearly impossible to spread on the cookies. Just a disaster. We ended up only icing a few, it was just too much work... I added more syrup, I added more milk, trying to get it to work, but it was just too gooey to work with.

Blue Ribbon Sugar Cookies

These were perfect. I used them in my cookie press from pampered chef and they turned out perfect... absolutely perfect. Tasted great, light and slightly crispy... perfect perfect! A keeper for sure!

Clone of a Cinnabon

These were GREAT! Close enough to a mall cinnamon roll that DH loved them! I've made them three times in the past few weeks... I loved that the dough came out almost rubbery from the machine... VERY easy to work with.

Beef Nacho Casserole

We really liked this one! I had to change it for what I had, I used a can and a half of Rotel instead of salsa (drained it a little bit) and used cheddar cheese. A keeper for sure. Next time I might sub Ranch Dressing for the mayo just to kick it around it a bit. VERY yummy!

Black Forest Mini Cheesecakes

These were a HUGE hit at our 10th wedding anniversary. My family isn't big on sour cream so instead of the topping, I used creamed cream cheese and sugar and topped it with that. HUGE hit. Highly reccomended.

Aunt Teen's Creamy Chocolate Fudge

Every year I try to make fudge and every year it never sets, it's always runny. Until this year... this is by far the EASIEST and most problem-free recipe I've ever tried. I followed it exactly as it was and used cookie piece pecans. YUM! My only complaint? It's too rich, you can only eat a very small piece at a time! :)

Cheese Lover's Tuna Casserole

DEFINITELY "Cheese Lover's", but my family is major cheese-a-holics, so this was a GREAT recipe. I probably didn't use as much cheese, I kind of guessed at it. I used grated cheese as well. I actually made this ahead and froze it, it froze VERY well and was the best Tuna Casserole I've made. A keeper for sure!

Simple White Cake

I made this twice. The first time the cupcakes were a little dense, but I think I may have cooked them too long. The second time, I doubled the recipe and they were PERFECT. I also put sprinkles in the mix to make confetti cake. They were great for my son's birthday! Thanks for sharing this one... this was easier than a mix even!
