Lime-Marinated Mahi Mahi
I made this with much less oil--1/4 cup, along with 2 cloves garlic, 1/8 t pepper, 1/4 t cayenne, the juice of 2 limes (4T), and 1/4 t zest. Followed the suggestion of one reviewer and placed it all in a hot skillet. YUM! PERFECT!

Glazed Pearl Onions with Raisins and Almonds
I made this unusual recipe for a book club pot luck dinner. We read Tulipomania about the Dutch tulip craze of the 1600s and how some people mistakenly ate valuable tulip bulbs thinking they were onions. It was a PERFECT recipe to this event and was a hit. I sprinkled some dried parsley and snipped chives on top for a bit of color, and I added a 1/2 t of garlic powder. Maybe next time will add a clove of minced garlic at the start of the simmering.

Lemon Chicken with Broccoli
Great recipe. Trader Joe's carries a low sodium chicken broth concentrate that is delicious--more intense, less salty flavor.
