Tasty Collard Greens
Kosher Collards! I could feed these to my Jewish husband because there is no pork in them. One of my black friends exclaimed that they were better than his mother's. Is there a higher compliment?

Roasted Rack of Lamb
Incredibly delicious! I read the reviews and anticipated it taking longer than stated, but after my third test with the meat thermometer I simply cut them apart and finished them up in a skillet.

Big Soft Ginger Cookies
WOW! I followed lots of the good advice to make this great recipe even better, and a few of my own twists: *Increased flour to 2 1/2 cups *Used OJ instead of water *Increased cinnamon to a full teaspoon *Added 1 teaspoon vanilla *Used butter (had it in the house) *Used brown sugar in place of white *Added 1/4 teaspoon almond extract *Added a pinch of nutmeg *Chilled dough and used a melon baller for uniform size. *Simply dipped the tops of the dough balls in colored sugar/Halloween sprinkles. FANTASTIC results!
