Penne Russo a la Vodka
This is just about the easiest thing in the world to make, and so good!! I didn't have any prosciutto, and so made this vegetarian. Instead of 2 cans whole peeled tomatoes, I used 1 can diced tomatoes and 1/2 a jar of spaghetti sauce, because that's what I had on hand. It was still absolutely delicious!!

Shepherd's Pie VI
5 stars, says the boyfriend! I followe advice about the packet of gravy, and only changed two other things-- I used Parmesan instead of Cheddar, because that is what Cheesecake Factory does (which is his fav), and I added frozen peas. Great comfort food, and good for leftovers!

Eggnog Cheesecake III
So good! I tested this before Christmas to make sure it is good enough to serve a group, and it definitely is! I scaled the recipe for 11 people (cuts the cream cheese to 2 packages) and it fit in a prepared 10" graham crust perfectly. Baked like is was a pumpkin cheesecake, perfect timing! Used Southern Comfort vanilla eggnog to make it appeal to more people. Can top with leftover (homemade) cranberry sauce, chilled, to make it more festive. Absolutely delicious!
