About this Cook
I'm the mother of triplet daughters . I'm a critical care nurse by background, and I work fulltime as a hospice nurse. I love to cook and bake. I love to eat but I'm being really calorie-conscious these days so I try to practice portion control so I don't have to eliminate all the good stuff from my diet. I also like to scrapbook and read, time permitting! I like to find old cookbooks to add to my collection. I have 3 cats: one fat old mean cat (but I love him!) named Tiger Jack, a gray calico named Cupcake, and a black cat named StellaLuna. My fiance recently moved in (getting married in September!) and he brough HIS 3 cats with him. We also have a dog named Greta. I'm majorly addicted to recipes. I'm working on producing a cookbook for my daughters for when they move on to their own households.

Paska bread at Easter. We're traditional turkey at Thanksgiving and Christmas.

Curry-Coconut Shrimp
This was ok. It needs more BAM! It didn't taste *bad* it just didn't wow us. I left out the red pepper simply because I was all out. I didn't need the cornstarch as the mixture was already thick (fine by me; I don't like adding it if I don't need it). Needs more *something* ... more curry, more coconut, some salt...something. I'll work with it and tweak it, though. It's a good base recipe.

Pasta with Pesto and Scallops
This was quite tasty and easy enough. I happened to have almost all the ingredients on hand...I used a thin, whole-wheat spaghetti instead of fettucine because that's what I had. I think it enhanced the dish! I will definitely make again.
