Cream Cheese Squares

My new favorite from AR. I made half a recipe in an 8 x 8 pyrex pan, otherwise followed the recipe exactly. I was craving a cheese danish and this fit the bill. Thanks.

Hasselback Potatoes

These are the best poatoes ever. Only giving 4 stars because I omitted the cheese and bread crumbs. They were great with just butter, salt & pepper. I cooked them in a thin aluminum pie pan and the bottom came out very crispy.

Pecan Pie Muffins

I added some vanilla because one reviewer said "they were missing something" and I think this did the trick. I made half a recipe and it made 16-1 TBS muffins. The first batch I baked for 15 minutes and the second for 12 minutes. I like the shorter baking time. These are going to go on my dessert buffet on Christmas--if they last that long. They are in the freezer now, but I know they are there; hopefully, out of sight, out of mind. Thanks for the great recipe.

Corn Pudding

I sauteed half a small onion in the melted butter and subbed 11oz Mexicorn for the whole kernel corn. I think it would have been too bland without these changes. It turned out very good.

Pumpkin Cheesecake II

I baked it too long, the top cracked and I some how managed to mess up the crust (using ginger snaps). But it tastes fabulous. I subbed the following--skim milk for the cream, 1/4 tsp cloves & 1/4 tsp nutmeg for the mace and the zest of one lemon for the lemon extract. Gobble, Gobble.

Donut Muffins

Sorry to be so negative but this was waaaaaay too salty and had absolutely no pumpkin flavor. I followed the directions exactly except for subbing not fat half & half for the cream.

Cream of Fresh Tomato Soup

Not much tomato flavor but easy to put together and I love the texture. I made exactly as written except used 4 medium tomatoes and butter instead of margarine. Next time I'll use more tomatoes, saute the onions along with some celery. Great jumping off recipe.

Cindy's Awesome Clam Chowder

Not "clammy" enough for me although everyone else loved it. I made it exactly as written except omitted the carrots--in my mind carrots do not belong in clam chowder. Does not need any additional salt. And for some reason it was overly sweet; don't know why. I think I'll add a 3rd can of clams next time and some celery. UPDATE: I've made this twice since the original review. I doubled the clams and sauteed some celery with the potatoes. First time--still too sweet. Third time is the charm I guess. I used regular half & half instead of the non-fat and voila--the sweetness was gone. Wonderful chowder.

Mom's Pineapple-Zucchini Bread

I can only give this 4 stars because I changed it so much--it was still wonderful. My changes--substituted applesauce for half the oil; reduced sugar by 1/2 cup; omitted nuts and nutmeg and upped the cinnamon; used half KA white whole wheat flour. Still very moist and flavorful and plenty sweet. Great with cream cheese. Thanks Christine.

Actually Delicious Turkey Burgers

Made these exactly as written except omited the parsley because I nerver have any. Thought I had some Montreal Steak Seasonning but couldn't find it; will add some next time as suggested by other reviewers. Can't comment on the blandness becuse we had some wonderfully ripe tomatoes and dill pickles on them. Will be making them again. Oh...They weren't dry at all. I cooked them quickly on my George Foreman grill set at high.

Zucchini Cake III

I only had 3 eggs so I scaled down the rest of the ingredients appropriatly and added a handful of raisins. It only took 55 minutes in a 10 cup bundt pan. It was very oily, so only 4 stars. Otherwise it was delish. Next time I'll substitute applesauce for half of the oil.

Peachy Cake

As the first to reveiw, I'm sorry I can't give this more than 3 stars. I followed the directions exactly. The recipe is easy but is lacking in a couple of ways. I think the addition of vanilla or almond extract to the batter and a sprinkling of cinnamon on top would give it a big boost. I used a 10" dark nonstick springform pan and the cake was over-cooked at 30 minutes; I'm glad I checked when I did. Also my peaches were rather small & 4 were plenty. The cornmeal was an "interesting" touch.

Potluck Spareribs

Sauce was way toooooo vinegary (if that's a word) for me. But that is my personal taste. The cooking method was great. Next time I'll try some dry rub on the ribs and stick with my Sweet Baby Rays.

Spiced Pot Roast

I would give this 10 stars if I could. Made it exactly as written except I cooked it for 6 hrs on low in the crock pot. Served it with rice pilaf the first night and with soft polenta a couple of days later. It was wonderful. Next time I'm going to make my own chutney as it is easy to make in the bread machine of all things. Thanks so much for the recipe.

Taco Seasoning

Only giving this 4 stars because I make changes. I reduce the chili powder to 2 tsp and increase the cumin to 2 tsp. And I don't use the cornstarch. I've been using this recipe for over a year now and will never buy the mix again. Thanks for helping me save a little $$.
