BLT Dip

We LOVE bacon, so this was a perfect recipe for our family. Letting the tomatoes drain well ahead of time on a paper towel was definitely a good idea to keep this dip nice and thick.

Strawberry Romaine Salad I

I've served this salad twice in the past 3 weeks and both times the recipe was requested by more than one person. It is perfect for summer. I took some others' advice and used a little less milk, chopped the onion (no Bermuda so I used Vidalia) very fine and added it to the dressing mix, and I offered Almond Accents as a sweet, crunchy topper.

Fantasy Fudge

This is my favorite fudge. I make it every year for Christmas. Instead of the Bakers Chocolate I use a bag of semi-sweet chocolate chips.

Bone-In Ham Cooked in Beer

As RR would say, this was yum-o. Used a 10 lb hame and baked for 5 hours at a slightly reduced temp, basting occasionally. Ham was falling apart.

Day Before Mashed Potatoes

Kalua Pig in a Slow Cooker

This was delicious! Several folks were headed to Hawaii this summer and I served this with rice, creamed corn and Hawaiian rolls for a pre-trip meeting in our office. Everyone loved it.

Almond Mandarin Salad

Made this for bunco. It was very easy and very good. I used bagged mixed lettuce and spinach and took the suggestion for honey roasted almonds. We were practically licking the bowl clean!

Yum-Yum Corn

I made this for my extended family for Christmas. I used canned corn instead of frozen. Everyone loved it. It reheated well, too. This is definitely too rich to make often, so it will probably be reserved for special occasions.

Marinated Mushrooms II

I made these mushrooms ahead of time for a Super Bowl Sunday appetizer for my vegetarian mother and then I forgot to set them out! My co-workers were glad because they got to eat them the next day. Everyone enjoyed the flavor and several people asked for the recipe.

Southern Potato Salad

I made this to go with brisket on Super Bowl Sunday and everyone loved it. I used gold potatoes and added some finely chopped onion. It tasted good as leftovers the next day, too!
