Mm.. hit the spot on a warm day. Omitted the soy powder because I didn't have it. Tastes great even with fat-free yogurt, thanks!

Baked Chicken Nuggets

Reviewed: Aug. 30, 2007
Way easy and delicious, better than the frozen ones (although probably not anymore healthy). Does not serve 6, but will definitely make again. Thanks! **UPDATED*** I now dip them in buttermilk instead of butter (saves a ton of calories). I grease the pan with cooking spray, lay the coated chicken pieces evenly, then I spray with the cooking spray. They still taste awesome and are A LOT healthier. I mix 1/2 dijon and 1/2 honey for dipping sauce.

Easy Slow Cooker French Dip

Reviewed: Aug. 21, 2007
Absolutely delicious. I'm not a huge beer fan, but the beer flavor was so subtle and just added great body to this sandwich. Next time, I'll slice the meat half way through because it wasn't as tender as I thought it would be. Also, I added 2 cloves of garlic (halved), a few whole peppercorns, and more beef broth b/c we like more au jus. Great meal to come home to, thank you, thank you!

French Country Bread

Reviewed: Aug. 18, 2007
I thought this recipe was a 3, but my boyfriend liked it and gave it a 4. I guess I don't really care for wheat breads. Aesthetically, I'd say this was a 5, but it was somewhat lacking in taste. I upped the salt (only to 4 tsp), like other reviewers, but it came out too salty for my liking. I had to add an add'l 1.5-2 cups of flour.. Thanks for the recipe.

Banana Bread V

Reviewed: Aug. 4, 2007
Mmm! Delicious! The only thing I changed was using half brown sugar and half white sugar instead of using all white sugar. So good, I'm making another loaf right now! With cinnamon, vanilla, and oatmeal on top. Just the right density, not too heavy like Banana Banana bread. Thank you! This is a keeper.**UPDATE** The baked the second loaf using an 8x4... should have stuck with a 9x5, was a tad dry due to the longer cooking time =( Anyhow, wrapped both loaves in foil overnight... the first loaf was even better the next day!

I cut out the topping b/c I made it in a hurry this morning. Delicious and used up those brown bananas! Will make again, easy breakfast.

Famous Chicken Francaise

Reviewed: Jul. 19, 2007
Pretty good, didn't have garlic powder so I added 1 clove minced garlic when I added the broth (w/ a little flour added for thickness). I wish I would have added more garlic as this was a little bland. Nonethless, good. Thank you.

Baked Potato Soup I

Reviewed: Jun. 27, 2007
I slightly underbaked my potatoes, but the soup still turned out pretty good. The roux in the beginning turned out to be a disaster... way too much flour for that little amt of butter. I added flour and milk gradually (adding flour to a warm mixture in a separate bowl), so it wouldn't clump up. I painstakingly mashed up the potato while they were in the soup in attempt to cook them--it worked! I used a little half and half b/c I ran out of milk, so I didn't quite add 7 cups of liquid. Anyway, thanks for the recipe, awesome except for the roux in the beginning.

Clark's Quiche

Reviewed: May 14, 2007
I used 2 regular pie dishes, so I had to cut back on the egg. I should have baked the pie crust (edges wrapped in foil) for 5-8 minutes or so before filling it because the pie crust was undone! Used very little salt (bacon and ham had enough). Delicious, will make again with changes.

Tres Leches (Milk Cake)

Reviewed: May 6, 2007
Not bad. Skipped the whole milk (afraid it would be too much liquid for the cake to absorb) and topped the cake with unsweetened whip cream instead (to counteract the sweetness of the cake). Yum!! Thanks!

Frijoles I

Reviewed: May 6, 2007
I forgot to soak the beans the night before, so I used 2 cans of pinto beans (liquid as well). Added a little chicken bouillon and sauteed onion and garlic. I only used 1/4 cup butter. After waiting a while hoping the excess liquid would simmer away, I grew impatient and tossed in a can of refried beans, mashed the whole mixture up, and poured it in an 8x8 pan. I topped it with cheddar and queso fresco (leftover from the enchiladas) and baked it. Turned out awesome! The pan was scraped clean when I took it home. Thanks!

Mexican Rice III

Reviewed: May 6, 2007
This was pretty good, however I made quite a few changes. I doubled the rice/chicken broth, but kept the same amount of veggies. Cut the cilantro in half, but added 1/2 of an onion (chopped). I didn't add extra bouillon b/c I pinch of salt was salty enough, bu t I did add half a small can of tomato sauce (my bf's mother always did). I also added the cumin and garlic while the rice was toasting. Thanks for the basic recipe.

Authentic Enchiladas Verdes

Reviewed: May 6, 2007
Everybody raved about this on Cinco De Mayo. I cheated and used Herdez Salsa Verdes (3 cans), and doctored it up with garlic powder, chopped jalapenos, and chicken bouillon (to make it more like the recipe's salsa). Other than that, I followed the recipe to a T. Tasted great, and just the right amount of heat. Thanks so much, I'll be making these again (when I have time of course, b/c these were so time consuming!!)!

Delicious Rosemary Bread

Reviewed: Apr. 26, 2007
Mmmm. Smells great coming out of the oven (doesn't ned to brown very much on top). Mine took about 20 minutes. I used the whole amt. of rosemary in the bread (vs. on top) and it turned out fine. The only thing is that after one loaf, my bf and I were rosemary-ied out. I may try making this without any spices for plain loaves. Thanks for the recipe!!

Beef Tips and Noodles

Reviewed: Apr. 23, 2007
Great recipe, but I cut it down to 30 minutes in the oven by browning it a little on the stove top, then putting it in the oven, in a little foil packet for 30 minutes. I used fresh mushrooms b/c I didn't have canned. Cut the onion mix to half (all I had). Great! Thank you!

Tres Leches Cake

Reviewed: Apr. 22, 2007
I would say a 3.5. This cake was gorgeous when it came out of the oven, however, a couple minutes later, it caved!! It shrunk and looked similar to a crater.. luckily I hid the shape with A LOT of whipped cream. The cake didn't absorb the milk mixture very well. Overall, the cake was pretty good, not very sweet (the way I like it). I topped it off the cherries b/c my friend's allergic to strawberries (which I would have preferred). Thanks for the recipe, I wonder if I did something wrong?

Asian Beef with Snow Peas

Reviewed: Apr. 16, 2007
Quick and delicious! However, not enough sauce.. I suggest using dark soy sauce and just a little bit of water (more flavor and just a little saltier). I add just a little water in the pan when it's almost done to get all the stuff off the bottom of the pan and into the sauce. I also used powdered ginger in the soy b/c it wasn't gingery enough for my taste. Also, only 1/2 the rice vinegar. Works equally well with chicken and shrimp. Thanks!

Awesome Carrot Cake with Cream Cheese Frosting

Reviewed: Apr. 9, 2007
If I could give this a 4.5 I would. The cream cheese frosting is divine... and even if I find a better carrot cake, I will definitely use this frosting. The cake itself was somwhat bland, I should have added a few more spices (I added cinnamon, allspice, nutmeg).. it's still missing something. I baked it in a 12 inch round dish and it turned out great. Thanks!

Deviled Eggs II

Mmm.. great appetizer for guests! Great for BBQs as well. I add more mayo, b/c I like the smoother texture (vs. the yolky texture). Sometimes, if I have left over bacon, I'll crumble and add that... so good! Thanks!

Awesome Roast Beef

Reviewed: Mar. 27, 2007
Tasty! I added baby carrots, 1/2 sliced onion, and sliced mushroom to my 1.5 lb. roast. I figured, it I cut the meat in half, I would cut the time in half. I was wrong. It took about 6 hrs. to cook this to the "falling apart" stage. Was a little bland and not salty enough, but could be because I added veggies which absorbs salt. I sprinkled a little dry onion soup mix over it and increased the salt, however with all the additions, I'd give the recipe a 5. Great start though, thanks!
