Banana Oat Muffins

Healthy, yet good... paradox? None of my co-workers could tell that this was the healthier version of the usual banana nut muffins. Thanks! I will be making this often. **UPDATE: Only use very ripe bananas, or it'll turn out yucky..

Irish Cream Truffle Fudge

I substituted a 1/4 c. of butter in place of 1/4 c. of Bailey's.. big mistake. According to many reviews, the fudge tasted very booze-y, so I used less alcohol. When I was done, the fudge really smelled like Irish Cream, but the next morning when I wen to cut it, it neither tasted nor smelled like Irish Cream... disappointing. And I don't really care for alcohol, so I don't know what happened. Wasn't as creamy as I'd like. I'd give this recipe a 3.5 if I hadn't messed with the proportions.

Beef Tamales

I should have listened to everybody else when they told me tamales were an all day task! The meat was really good (I may use it for taco filling, etc.), but next time, I will cook it in the slow-cooker ahead of time. The directions were fantastic and very detailed.. great for a beginner like me! However, my only qualm with this recipe is the masa. Did I select the wrong masa? Anyhow, it was very dry. I may have to increase the lard next time (never thought I'd say that!!). Also, when we ran out of masa, I used 1/3 lard and 2/3 shortening.. big mistake.. they turned out crumbly and flavorless. I will try again next year, but will tweak the recipe some. Thanks!

The Best Rolled Sugar Cookies

Simple, but great. Wasn't too much of use to me because I can't ice a cookie to save my life! Nonetheless, very good. Mine took about 6 min.(they may look like they're underdone b/c they don't brown on top).

Special Buttercream Frosting

Mm.. I made a few changes to make it a 5: used 1/4 butter and 3/4 shortening as other reviewers suggested, and i only used about 3/4 of the sugar amount stated and it was plenty sweet. I think i ended up adding more cream just because i was trying to frost the cake while it was still a little warm so i needed a softer consistency, but i'm sure i would have used less otherwise. Really good and easy!

Basic Flaky Pie Crust

I used 1/4 c. butter and 1/4 c. shortening for the oil, and although the pie crust had a good flavor and was flaky, it wasn't as light as I expected it to be. I think that next time I will use 1/4 c. butter-flavored shortening in place of the butter. Great and easy, I will re-rate when I try the butter flavored shortening. Thanks!

To Die For Blueberry Muffins

These were delicious! It took slightly more than 1/3 c. of milk to fill the 1 c. measurer. Also, I only used half the streusel topping, I might try brown sugar/buttermilk like the other reviewer's suggested. I used frozen blueberries (although I prefer fresh, I always keep frozen blueberries), be sure to add a little more sugar to the recipe or toss them with a little sugar before adding them b/c they typically aren't as sweet as fresh ones. Overall, really good, my boyfriend loooved it. ***UPDATED*** I use buttermilk instead of milk, sometimes I'll add a splash of milk if the batter is too gooey, but it will be gooey. This recipe is SO versatile, so I added a star. I've made this with reduced sugar, with half whole wheat flour, I've doubled it.. they always turn out! I make this regularly. Thank you!

Puerto Rican Steamed Rice

Cuban Shredded Pork

This did not taste like Lechon, it was dry and relatively flavorless even though I added cumin and extra spices. The only thing I changed was that I cooked the roast in a slow-cooker first. Will not make again. Thanks anyhow.

Really good and really easy, my favorite combo! I followed a previous reviewer's advice and topped the biscuits with melted butter and parmesan before baking, and used the spaghetti sauce just for dipping. Mmm.. a keeper! Thanks!

Florentine Stuffed Chicken

This wasn't very good. I accidently mixed the cheeses in with the spinach, but I doubt that would change the taste much. Really bland and not so quick to make. The only upside to this dish was that I got my bf to eat spinach because he was too lazy to pick it out. Even covering the top with cheese didn't really make this very good. Maybe I should have added bits of bacon inside? I don't think I'll be making this again, sorry.

Chicken and Dumplings III

I really wanted to give this a 5 and I would if it included these changes: 2 carrots, chopped; 2 stalks celery, chopped; teaspoon whole peppercorn; 1 bay leaf. I also used 2 large chicken breasts instead of chicken thighs becuase that's all I had. Also, I only used 1 can cream of celery soup b/c that's all I had. I have never had chicken and dumplings, but this is awesome! I will definitely make again and again, esp when I have some left over chicken. Definitely a keeper!

Delicious Ham and Potato Soup

Mm.. I used peeled baby red potatoes b/c that's what I had on hand. I used Canadian bacon instead of ham (I always do, it's healthier). I messed with the proportions a little so I needed to add cream at the end, but I think as written, it would have turned out just as good. Thanks!

Corn and Zucchini Melody

Great way to get rid of that extra zucchini. I used half a can of corn (a whole can looked like a bit much and I don't like corn all that much). The bacon and cheese were a nice touch, I liked it without the cheese as well. Thanks!

Banana Sour Cream Bread

I was really skeptical about trying another banana bread recipe since I thought I had found the one, but after trying this one, I'll never use another recipe unless I have to (I don't always have sour cream). This bread was so moist and creamy. I halved the recipe, but used 2 eggs (didn't want to throw away half an egg!), I also used 2 tsp of baking soda instead of one to compensate for the extra egg. Also, I like brown sugar so I used 1/4 c. of it. Loved, loved, loved this banana bread!

Risotto with Sun-Dried Tomatoes and Mozzarella

I accidently added the tomatoes in the beginning. I didn't have veggie stock, so I used chicken. Pretty good. I'd cut down on the cheeses to about 75%. I also added an extra 1/2 c. of liquid because it wasn't soft enough. Thanks!

Italian Sausage Soup with Tortellini

I used mild italian sausage and added a little sugar (I don't know, is there a difference?). I only used half the tomatoes (I had gigantic tomatoes...) Omitted the carrots b/c I forgot and added a little thyme/rosemary. I didn't quite get enough oil from the sausage so I used a little olive oil to cook the onions/garlic. This dish was delicious! Paired with crusty bread and parmesan, great for winter! Definitely a keeper. Thanks!

Asparagus Chicken Crepes

Tasted great! I accidently used the mayo as part of the filling, but caught myself half way, I used lowfat plain yogurt instead for the topping. Also, I was in a rush and didn't defrost chicken, so I made the crepes without chicken, turned out awesome. Thanks!
