Pumpkin Pie Bread

Wow this was delicious! I didn't have pumpkin pie spice so I just did 1 tsp nutmeg, 1 tsp cloves, 2 tsp cinnamon. Before putting it in the oven I sprinkled pumpkin seeds down the middle...made for a nice presentation and added some crunch. I used a rather large can of pumpkin and had enough to make a 3rd loaf by dividing this recipe in half...IT WAS THAT GOOD!!!

Cinnamon Rice with Apples

This was very good! I served it along side pork sirloin roast as an alternative to the usual mashed potatoes and gravy. I didn't have any raisins or fresh parsley so I substituted with diced celery and dried parlsley flakes. I used a red delicious apple which held up in nice diced cubes and didn't go mushy while cooking. I will definatley make this again and be sure to have raisins on hand nest time.

Mixed Greens with Pear and Pecan Salad

This was an intersting salad. We had it along side bbq hamburgers. I would definately make it again...next time trying pecans instead of walnuts. I used 'Mesculin Mix' that you weigh out at the supermarket for the greens. I don't know if that's what they meant by mixed greens, but it tasted great! It had a mix of baby greens, raddichio, etc... My fiancee enjoyed it and he never likes dressing on his salads...but the ranch dressing complimented it well.

Streusel Apple Coffeecake

This was pretty good! I really enjoyed it. I planned on making the cake myself, however, I ran out of time and assigned the job to my mother who was visiting us. She followed the recipe exactly and used the proper pan that it called for. But there was so much batter. She filled the pan as much as she could to allow for expansion as it baked and she still had batter left over. And even with the room she allowed for in the pan, it still overflowed as it baked. Therefore, we had a rather messy looking cake...but it tasted delish! I'll give this one another try on my own just because it did taste so good. Made the house smell great on a cold fall day too!

Pork Chops for the Slow Cooker

I made this for my mother when she came to visit my fiancee and I. The pork was very tender; so tender that it fell apart in your mouth! But beyond that the recipe wasn't what we were expecting. Everyone thought that it tasted heavily of the soy sauce, and I even cut back on the soy sauce after reading the other reviews. Don't get me wrong...the pork was certainly edible, but the flavour just got to be soooo much! It was a decent recipe, just not something I'll be craving to make again.

Chocolate Chip Banana Muffins

These muffins were good...I added some extra chocolate chips to the tops of them before I put them in the oven. That was a little too much cholcolate, we ended up picking them off. I wouldn't do that the next time that I make them. My partner was having a "boys night" out at a friends house...so I sent a container full of these muffins with him (as I had made a double batch). He came home with an empty container and rave reviews...they even liked the chipits on top! Not too chocolatey for them I guess!

Erica's Delicious Slow Cooker Beef Roast

This is a delicious recipe! I used a 4.5 lbs roast which I cooked for 2 hours on high, then 5 hours on low. I altered the recipe a little by shaking some worcestershire sauce over the beef first, and adding 2 cans mushroom soup with 1 cup water and 2 beef oxo sachets for the gravy mixture. When it was done I thickened the gravy with a little "Bisto Brown Gravy" thickening powder. I was glad that I read the reviews before making this. After hearing all the wonderful comments about the carrots...I anticipated much delight for these at my dinner table, so I used about 40 carrots and 2 onions! This recipe was such a hit...and I've now just told my mother about it and she's going to make it this weekend when we come to visit...Can't wait!! Yum Yum!

Oven Roasted Potatoes

Great sidedish recipe. It's easy to whip up and taste great! The whole house smelled like I had been cooking for hours...but they really don't take long at all. It's already a quick recipe, but when we are really in a hurry and don't feel like boring convenience food we use those ingredients on canned whole potatoes. Just take 1 can of whole potatoes, all the spices from the recipe (about half of the measurements though), and fry them in 2 tbsp olive oil and 1/2 tbsp butter till they are browned. Either way you make them they are a great tasting sidedish for a rushed night.

Crispy Rhubarb Pie

This recipe was pretty good...although I only gave it 3 stars. I doubled the crumb topping for this pie. However, the topping got a little too crispy. It was almost borderline "hard". Perhaps I will try it again and see if I recieve the same results...maybe I pressed it down a little too firmly? But the pie itself tasted great...I even added some strawberries like other reviews had suggested. That was a nice summer addition!

Banana Bread II

This was the most delicious banana bread recipe that I've ever had! I made it sometime ago in the fall but forgot to post a review. Since the first time that I made it and because of all the raving reviews I received, I now make it every week! This is a main staple on our kitchen counter for after work snacks now. The only thing that I do differently is add a little bit of cinnamon to the batter. I've never seen banana bread so moist!

Cola-Basted Ham

I made this ham for my in-laws at Easter this year. What a terrific idea to add cola in the cooking process! I did however tweek it a little. We had 2 half hams that totalled just over 8lbs combined. I scored the top of both hams and poured 2 cans cola over them. (Two cans gave me about a half inch in the bottom of my big roast pan.) I left the lid on and basted about every 15-20 minutes with the cola in the bottom of the ham. I didn't make the recommended paste for our ham but rather did what I usually do when making a ham. Mix together 1 cup brown sugar, 1 tbsp dry mustard, 1 tsp yellow mustard, and enough real maple syrup to make a thick "slurry". The ham was baked in total for 2 hours. During the last half hour is when I brushed on the maple mixture, with the lid off. My partners scepticism about cola and ham together went away with the first bite he had! I didn't tell our guests till after they were done that it was basted with cola...my mother and father-in-law had 5 plates between the 2 of them! The cola was a tasty addition to my old recipe. Thanks so much!

Sophie's Zucchini Bread

This was the best zucchini bread I have ever tasted! Even my picky boyfriend who believes that vegetables don't belong in baked goods loved it! It was very moist and full of flavour. This is definately a keeper that will be shared with my family and friends. Thanks Sophie! :)

Garlic Salmon

This wasn't a big hit with us. The salmon itself was tender and flaky. However, I didn't find it terribly flavourful like I had expected it to be...somewhat dissappointing but still edible. I wouldn't make again though.

Banana Cake II

This was an amazingly moist cake. For sour milk I used an old family method: 2 tbsp vinegar and enough milk to make 1 cup (I only used 3/4 C like the recipe calls though). I frosted it with a little homemade chocolate icing and sprinkled it with chopped walnuts. This cake was a real nice treat and great to take to work if made in a 13x9 size.
