Basil Cream Sauce

Amazing! Before the last step, (heat & thicken) I sauteed shallots and baby portabellas in a tbsp. of butter and poured the cream sauce into the pan to heat & mix. I also used only a tbsp. of olive oil & half and half.

Summer Squash Puffs

I knew what I was getting into when the ingredient list begins with 1 quart of oil. But these little puffs did tend to soak a lot of it up (even with very hot oil), thereby making it a far cry from a healthy snack. That said, I am sure that is not the intent of this recipe. After frying the first batch using the recommended tablespoon, I switched to teaspoons. The recipe yields way too many for a family of two, and I thought smaller ones would make a nicer treat to take to work and share with others. Next time, I would probably up the dry ingredients a bit, as the batter was more like pancake than puff. I gave four stars because they are a guilty but scrumptious pleasure.

Baked Omelet Roll

This is easy & an impressive breakfast treat. I saw no reason to add the flour, omitted it, and had no problem. I also add onions, mushrooms and peppers, sauteed before adding & rolling.

Firecracker Grilled Alaska Salmon

Sweet & spicy is one of my favorite combinations! I looked up this recipes a couple of years ago and have used a variation of the ingredients for almost every marinade since. I usually increase the garlic, ginger & onion (have substituted shallots) and decrease oil. I've also broiled and it retains more of the marinade flavor although grilling adds a bit of smoke and I'm sure a healthier option.
