I love foods that pack a punch! If it has peppers in the recipe, there's a good chance I'll love it. I always look for the spiciest thing on the menu!
My favorite things to cook
I LOVE to cook and bake. I enjoy the time it takes to dice and slice fresh ingredients and use that time to listen to NPR and reflect on my day. Cooking is my peaceful meditation. What I cook comes with love and peaceful wishes.
My favorite family cooking traditions
I don't have any cooking traditions. My biological mother was a terror in the kitchen, I'm not sure if it's from lack of knowledge or lack of trying(although her father was head hors d'oeuvre chef at the Hilton back home so I would imagine she should have picked up a thing or two). When I was a freshman in college I had a lot of time inbetween classes. I would sit int he commons and watch epicurious... it was before foodnetwork. Although much of the food was high end gourmet stuff that I don't care for or want to eat, I sure learned a lot of the principles of cooking. Who says TV rots your brain? I learned how to cook from it!!

I enjoy spending time in the kitchen and love to cook and bake.
My cooking tragedies
My first attempt at chicken parmesan was bitter, dry and just plain bad! I have learned to trust my guts, if you think a recipe calls for too long a cooking time... trust your instincts, check the temp when YOU think it should be done. Recipes are still suggestions.

Mexican Chicken I
Super recipe, yummy and easy. I agree with other reviewers that the temp and duration would be way too hot for way too long. I grow my own cilantro so I also added some of that for a bright taste. I of couse like everything I eat to be super spicy hot so I added cayenne. I used reduced fat cheese to make it a bit healthier, overall a great healthy dish. Easy for any night of the week!! Thanks for the recipe!

Veggie Skewers
I really enjoyed this recipe. I though the ingredients were delicate enough while adding some great taste. I like everything I eat to be spicy so I added some extra heat. I also love onions so I certainly had to pop those on the skewer. This was my first attempt at any kind of kabob, thanks for the great guidance! I am solo so I certainly had a bunch left over. I cooked a couple of meats to take advantage of the grill. I plan on using the left over veggies with steak for some steak fajitas tomorrow. I'm sure all of the wonderful flavors will be even better tomorrow! Thanks for this great , simple and healthy recipe.

Fast and Delicious Black Bean Soup
I really enjoyed this recipe; it’s fast and fairly nutritious. I used another member’s advice and used my emersion blender so I could get just the right texture between the beans and the veggies. I mostly made it to take to work by my boyfriend couldn’t resist trying it and he loves it! The only reason why I rated it a four versus a five is there was just too much ham for me. I did use a red bell pepper instead of green. Overall a great easy recipe!! Leftovers are great, one pot can make a several lunches!
