My favorite things to cook
I LOVE to cook and bake. I enjoy the time it takes to dice and slice fresh ingredients and use that time to listen to NPR and reflect on my day. Cooking is my peaceful meditation. What I cook comes with love and peaceful wishes.
My favorite family cooking traditions
I don't have any cooking traditions. My biological mother was a terror in the kitchen, I'm not sure if it's from lack of knowledge or lack of trying(although her father was head hors d'oeuvre chef at the Hilton back home so I would imagine she should have picked up a thing or two). When I was a freshman in college I had a lot of time inbetween classes. I would sit int he commons and watch epicurious... it was before foodnetwork. Although much of the food was high end gourmet stuff that I don't care for or want to eat, I sure learned a lot of the principles of cooking. Who says TV rots your brain? I learned how to cook from it!!
My cooking triumphs
I enjoy spending time in the kitchen and love to cook and bake.
My cooking tragedies
My first attempt at chicken parmesan was bitter, dry and just plain bad! I have learned to trust my guts, if you think a recipe calls for too long a cooking time... trust your instincts, check the temp when YOU think it should be done. Recipes are still suggestions.

Fast and Delicious Black Bean Soup
I really enjoyed this recipe; it’s fast and fairly nutritious. I used another member’s advice and used my emersion blender so I could get just the right texture between the beans and the veggies. I mostly made it to take to work by my boyfriend couldn’t resist trying it and he loves it! The only reason why I rated it a four versus a five is there was just too much ham for me. I did use a red bell pepper instead of green. Overall a great easy recipe!! Leftovers are great, one pot can make a several lunches!

Carrot Cake III
This is the most beautiful and delicious cakes!! It received rave reviews from EVERYONE who had a bite. I toasted the nuts and added extra toasted nuts to the iced sides of the cake for added taste and decoration. This is going to be the standard for which I judge all carrot cakes!

Tuna Salad With Fresh Dill
I very much enjoyed this recipe. It is very light tasting and perfect! I really liked adding yogurt, not only did it cut the fat, it also added a delightful tang. This is going to be my tuna salad recipe from now on! Note... I didn't have fresh dill s I had to sub with dried, still wonderful though.
