Triple-Cheese Macaroni

Ditto on the person that said I'm not sure how anything with so much cheese came out dry and bland, but it did. It was pretty dry, not very flavorful. My son complained it didn't taste like cheese at all. If I were to make it again, I would probably use 12 oz velveeta to see how that works. I even used extra mild and sharp and still was bland.

Broiled Tilapia Parmesan

This was amazing! I used the "bag o Tilapia" from WalMart and the little lemon shaped lemon juice dispenser. It was VERY good! It came to a nice crispy brown color and was to die for. It's definitely a staple in the collection as far as cooking Tilapia is concerned. YAY!

Amy's Cilantro Cream Sauce

Holy-heaven-in-a-bowl! This stuff is *amazing*. This is the type of dip that you go looking for something to dip in it, doesn't matter what as long as you get some! LOL I followed the recipe exactly and YUM is all I can say. We served it with some quesadilla rolls and tortilla chips and it will definitely be made again. I will say it makes a ton of dip and to say it serves only 4 servings is being VERY generous with portion size. LOVE it!

Cajun Shrimp Soup

This soup was REALLY good! My husband said it was the best thing I've ever made (and we've been together for 10 years). I didn't change anything about the recipe other than I didn't get the veggies very tender when sautéing them and we really liked the crunchiness that added later. I didn't have creole seasoning but had Penzey's Cajun seasoning and I used a teaspoon and a half of that. This is definitely a keeper and next time we'll add a can of crab meat to liven things up. Great recipe!!

Broccoli, Rice, Cheese, and Chicken Casserole

I pretty much made this exactly as listed (I'm a firm believer in trying the recipe as designed before making changes) but I added some garlic powder and some Fox Point seasoning from Penzey's Spices. It was really good! It is one of those dishes that will sneak up on you if you have seconds and feel kinda heavy in your tummy though, so be warned. :) Will definitely make again.

Easy Pumpkin Turnovers

The filing had a little too much cinnamon in it, and it felt like it was undercooked a bit and was missing something in texture. I can't say they weren't good though, because my family devoured them. :) I sprinkled them with regular sugar before baking. As a side note, don't use phyllo dough. I tried some with it and it was good but just didn't have the same pizzaz as the pastry dough. :)

Slow Cooker Chicken and Dumplings

Wow, this is a great recipe! I didn't grow up anywhere near the south, but I married a local. :) He loves chicken and dumplings and always orders it when he can. When I came across this recipe I knew I had to try it. :) It was awesome! I followed the tips here, and used broth instead of water, fresh parsley (more for color but the flavor it lent was excellent!), and seasoned with about 1/2 to 1 tsp of paprika, poultry seasoning, and pepper, and then splashed in a bit of pepper sauce. It was awesome! Will definitely make again.

Bacon Cheese Frittata

I gave this a three stars because it was really thin with just 6 eggs and my husband was pretty disappointed in it. The only change I made was I sauteed some white onion to use instead of the green onions.

Lemon Sauce for Salmon Patties

I've been looking for a good simple seafood sauce for a long time and this is it. It's not too rich, not too fattening and is very quick to make. We served it with salmon patties and this will be a staple in our house from now on.

I've never made cauliflower from scratch in my entire life. I found this recipe when my husband came home with a head after shopping for our new journey for a healthier us. This was simple, had all the ingredients on hand and will definitely make again!

Chicken Breasts With Herb Basting Sauce

LOVED this recipe! I'm just getting back to cooking after a 5 year love affair with fast food and honestly couldn't remember how to cook a chicken breast in the oven and had to think fast. I made a couple quick changes to it because of what I had on hand and they turned out great - used 1/4 cup olive oil, used poultry seasoning instead of the list of spices (didn't have time to drag them out), skipped the parsley and hot sauce as I didn't have them. I spooned the drippings over it every 15 minutes and pulled off the foil for another 5 minutes after 45 minutes (I used huge breasts and they weren't to 160 yet). Thanks SO much for a great recipe!

Steven's Baked Nachos

I was looking for something to make for a quick lunch and came across this recipe. I had to make some changes based on ingredients at hand. We used sharp cheddar instead of pepper jack, white onions instead of green and canned chicken breast instead of fresh. I would totally make this again, but would leave out the layer of sour cream. I found it to curdle (and wasn't very appealing to the eye) and made the chips soggy. Other than that we loved it!

I skipped the balsamic vinegar, and subbed regular musarted for dijon. I also used 2 tsp minced onion for the pickles and added a splash of granulated garlic. It was great!

This is a great, easy recipe and I had all the ingredients on hand. I have never made a frittata before - this was my first time and I got rave reviews. My hubby said it was one of the best things I have ever made and we've been married for 10 years. Definitely in the rotation!

Chinese Chicken Fried Rice II

This was really good! Take the previous posters advice - make sure everything is ready prior to cooking. I used canned chicken breast and heated it through with some EVOO and about a tablespoon of soy sauce. I didn't scramble the egg, but cooked two of them and cooked them fried-egg style and then chopped them up and put them over the chicken while I did everything else. I used a small onion and added two chopped cloves of garlic. Make sure the rice is cold and if it's lumpy, make sure you break the lumps up before adding it. Used about a tablespoon more soy than called for and did about 1/2 tsp of black pepper and 1/2 tsp of red pepper flakes. It was really good!

Crescent-Wrapped Brie

This was really good! I found out after the fact that I really don't care for melted brie, but hey, what are you gonna do? I added some cranberry jalapeno jelly over the top before I sealed it and it was to die for and the guests all raved about it.

Apple Crisp II

Love this! I did tinker with it a bit. I used half red and half golden delicious apples. I used twice the amount of cinnamon and 1/4 tsp of nutmeg and it was awesome. I used the amount of water called for, but it was a tad dry so next time I'll increase it to 3/4 cup. For the topping, I doubled it and didn't melt the butter, but cut it in once softened. I sprayed non-stick cooking spray and then put half the crust down. Put the apples down, sprinkled the apple mixture down, water, then the crust. It was great!
