Simple White Cake

i doubled the recipe with only 1.5 cups of sugar for 2 8" pans. (i did add a 1/4 tsp salt to flour, baking powder mix) i folded a pint of lightly sugared, hulled, and pureed strawberries. all ingredients at room temp. Whipped the butter and sugar 3 mins, added eggs 1 @ a time, alternated flour and milk in 3 portions, then the strawberry mixture. there in the oven now. look and smell delicious. 35 mins cooking time @ 350 in buttered, parchment lined, buttered again and floured pans. cooled 10 mins then onto wired racks until completely cooled

White Chocolate Macadamia Nut Cookies III

For Best Results: All ingredients should be a room temp. Including Eggs. Do not exceed medium speed when creaming butter or adding the eggs. It will be mixed enough in about 2-3 mins. Scrape bowl 2-3 times. Add flour mixture on slow speed and just till incorporated. Fold in nuts and chocolate by hand. Refrigerate batter about ten mins. Use an air-bake sheet lined with parchment paper. Use a small ice cream scoop to place cookies 2 inches apart. Bake @ 350 until edges start to brown. This can take 12 mins. let cool on pan for 2 mins then move to rack to cool completely.

Bacon Wrapped Barbeque Shrimp

to precook bacon place parchment paper on a cookiesheet (jellyroll pan) and lay bacon in a tight row. bake 14-15 mins @ 350. store in fridge (3-4 days) if making ahead

Best Brownies

Brownies will be dense and full of flavor if you mix by hand. I mix all wet together then sift all dry then add one to the other and fold 50-75 times. (until all lumps are gone). Pull it from the oven after 20-22 mins. and let it cool in the pan. For a frosting that has a ganache texture follow the directions and add 1T of cream to the butter, honey and vanilla. Sift the coco with the sugar then hand whisk it together until creamy.

Homemade Tomato Sauce I

The recipe is great. It does require you to taste and adjust. Mainly because of the size and ripeness of the tomatoes. I had 8 plum and i followed the recipe exactly but pureed everything after 2 hours then added some honey and white sugar to sweeten it up then a bit of salt to bring out all the flavors. I also added additional paste for more color. A fine recipe. Thanks for posting.

Manicotti Alla Romana

i always wow the fam with the red sauce from Bobby Flays Eggplant Parm and the 'Manacotti Shells' recipe from this site. The White Sauce will work out better if you cook the flour taste out in the butter for at least 2 mins then pour the 'warmed' 1/2 n 1/2 in slowly, while whisking until you have just 1/2 a cup left then pour the rest in. Now continue to whisk over med high and bring to boil. i boil for about 3-4 mins. it will thicken when cooled but will look like a milk shake when hot. Add parsley.

Cranberry Pistachio Biscotti

sticky! Yes, the dough was sticky. Almost glue like. i had to use a spatula to form it. it flattened a bit in the oven but basically kept its shape. started to rise after 20 mins. if this happens to you don't worry. its a great cookie. Just STICK with it.

Best Darn Minestrone Soup Around

i only replaced white beans for kidney and tossed in the ham bone from last night. everything else is as directed. it is colorful, fragrant, and tastes great. I did sub 1/2 n 1/2 for the cream. just wonderful.

Apple Cheese Danish

not well thought out recipe. but the cheese mix is tasty. it will mix. just not completely. it's fine however. the biggest problem is sealing the edges. wet one edge with a small amount of water then fold and pinch with fork tines. 20.mins at 400 is good. my kids ate them up

Kansas City Style Pork Back Ribs

Ok my family just about turned caveman over this recipe. an entire rack of ribs gone in about 10 mins. I cut the recipe to 2 servings for my 1 rack of ribs. rubbed every inch with the spice mixture and cooked on the grill for 65 mins @ 350. No turning. At 45 mins i basted one side with with honey and BBQ sauce. Then again at 55 mins. the rested for about 10 mins and all heck broke loose. I have never seen my wife eat like this before. Yum Yum!

Best Chocolate Cake

My 3 year old and i had a swell time making this cake. I used cake flour and halved the recipe so it would fit into an 8" round pan. I did grease and flour the pan. (always do) it was done in the time stated.

Cheesy Zucchini Casserole I

i used minced garlic and whole wheat bread. baked in an 8x8 for the recommended time. i also used 1/2 the cheese but a bit more wouldn't hurt. My wife is not a veggie fan yet the leftovers are missing. I bet she took them to work...

Lemon Blueberry Bread

i read a post that the bread should sit in the in the pan, in the fridge or it might fall apart. it did not happen. i did find it helpful to read other posts and i m sure the tips help my loaf turn out great. Another post warned about too many blueberries. I used 1cup fresh, washed, dried, and coated in flour. i folded in 1/2 and placed the rest on top. Result was good distribution. I also used powdered sugar for the glaze. This is a great looking loaf of bread. Thank you for the recipe

Pot Roast Caribe

I made this as is. my roast was 2.5 lbs. sauce will eventually increase. don't add more sauce. just cook on low for 8hrs and it will be almost completely submerged in juice. I did put some veggies on bottom.

Cannoli Cake Roll

good instructions. recipe turned out just fine. use metal utensils where requested. do not stir in whites and flour, fold just until combined. cake batter should look like yellow marshmallow cream. try not to spend too much time spreading batter into jellyroll pan. its ok if it is not perfect. bake 10 mins and no more. your dish towel should be more like pillow case material and not like a towel. Brush the flavored sugar and liquor mixture lightly. just enough to cover the cake. you may have some juice left over. not too tight on rolling it up. i rolled mine up from the short side. (end zone of a football field) ricotta should be full fat and not part skim. you should strain the cheese by placing it in a small strainer then hover it over a bowl and cover the top with paper towel and place in fridge for as long as you can. i prepped the cake with the cheese and left it in the fridge (rolled up) until the next day. then added the whipped cream before serving. (the cake takes up a lot of room in the fridge) it was a fab desert. thanks so much

Cannoli

A fab 'Shell Recipe'. I have made cannoli shells for years. I often look for new recipes and this is absolutely the best. A bit tricky but not difficult to run through the machine. After chilling the dough place a lightly floured board under the pasta roller attachment. Large gumball size balls are pressed into a small pancake then patted on the board and run through the machine dusting with each increment of the rollers. On my KitchenAid setting 6 is thin enough. I lay the disc on the board and lightly oil a tube. (don't skip the oil) Lay the tube on one end of the disc and roll the tube. When you reach the end dab egg white on the flap and finish rolling. Lightly press the visible flap to make the line somewhat invisible and place in 350 degree veg oil for 2mins. Remove with tongs to paper towels and repeat. The previous rolls are cool enough to carefully slide off the tubes in 2 mins. I make only 2 at a time so there is a bit of a pace to keep up with the timer. It will take about an hour to make 20 shells. NOTE: Handle uncooked dough with clean fingertips. If your not organized you can get the pasta machine too dirty and difficult to clean. I keep the oil a few feet from the dough. I also made filling from cannoli-enterprises.com Many recipes to choose from. My fav has folded whipped cream. I'm just about out of characters so i will now say good luck and have fun.
