The Best Rolled Sugar Cookies

This is a sticky dough. After chilling for 2+hours it was still sticky. I carefully kneaded the dough with 1/2 cup of flour, chilled for 30 mins and it was much better. I dusted with powdered sugar instead of flour while i rolled out small batches on parchment paper to 1/4" thick. I made large 4" cookies that took 11 mins. Do not wait for brown edges. 10-11 mins and their done.

Super-Delicious Zuppa Toscana

i have made this a bunch of times. Fab Soup. I do soak the potato slices in water while i am prepping everything else. The potatoes will stiffen and hold their shape after cooking. Makes for a better looking soup.

Shrimp Bisque II

A fab recipe. A bit of work but if you pre-read the recipe you can better organize yourself. I halved the recipe for ease to work with my kitchen. A sub for brandy is orange liquor and apple juice for the sherry. AND please take skillet off the heat (turn off) before you add the brandy, pour in, ignite skillet, then turn cooktop back on

Italian Roast Beef I

Searing the meat on all sides (except fat side) will hold in juices. I rubbed the oil and spices on, seared, then added to crock pot with bullionated water and cooked on low for 10 hrs. S-U-P-E-R ------------------------------------- For oven i would not use a pot too much bigger than the meat. [That will aid in drying the meat before it is fully cooked] You can place meat on a rack or place on top of chopped veggies. Then Rub, sear, and cook

The Best Mashed Potatoes

No vampires at my house! If you like garlic you will love these. If you want to keep your wife from passing out when you speak you will roast your garlic in the oven (wrapped in foil) for about 45 mins before you add it to this wonderful recipe.

Grilled Brown Sugar Pork Chops

The sauce was perfect for chops. The ginger gives it unique in flavor. Carefully cook chops on grill and brush on the sauce. Very simple, very good. Server with "The Best Mashed Potatoes"

Blackened Salmon Fillets

Incredibly Tasty! It is not as spicy as you might believe. My wife cannot tolerate too much heat and she ate the entire meal. After I washed the fish I patted them dry and rubbed on the spice mix on both sides. I did not butter them, instead I heated the butter in the pan (Grilling Pan) and placed the skin side up first for 5 mins. Carefully flip and another 5 mins. Serve skin side down. Spices stuck to fish and fish did not stick to pan. Cannot wait to make again.

Simple Whole Wheat Bread

I've made many recipes from this site. I have learned that experience improves the bread. This recipe is one of the best 'wheat' recipes here. My tip for you is to not add all the wheat flour listed here at first. Instead after the dough has rested in the mixer with the water, honey, yeast, and bread flour turn it on, add the butter and salt. I add 1/2 cup of wheat bran and 1/2 cup of wheat germ. Now begin adding wheat flour until it comes together. Now change to the dough hook and on speed 1 (no higher) kneed for 5-7 mins. If the dough is just spinning on the hook you need a tablespoon of liquid. It is OK for dough to be somewhat stickey but it should not sink to the bottom of the bowl when the mixer is shut off. It should keep its shape.

Eggplant Parmesan II

A very healthy eggplant dish. As other readers suggested 3 eggplants are far too many. I used 2 and 1 zucchini. adding zucchini to this dish will reduce the saturated fat and some of the sugars making it even better for you. And leave the skin on. Eggplant skin contains a potent antioxidant 'Nasunin'. give it a google.

Ricotta Bread

If you want to adapt this for your mixer and skip the bread machine I have found that this recipe makes a really good dough. This is a very good starter recipe for beginners because the dough is not too sticky and not too stiff. The ingredients are small and the loaf is a perfect size for two people. It turns out so soft from the oven that it usually does not last. To adapt I did this: Proof yeast in warm milk (110f) with 1 teaspoon of sugar (dissolve and let sit for apx 10 mins) Mix cheese with egg then add remaining sugar, butter, and 1/2 cup of flour. When yeast is proofed add to mix and then add remaining flour and sprinkle salt in. Mix for a min then change to dough hook. mix on med for 7-8 mins. Let rise in oven with lights on for about an hour. Punch down, shape into a log and insert into a glass pan. (grease lightly) after an hour turn on the oven to 375f and bake for 20 mins

Hearty Garlic Potato Soup

This soup is creamy and full of flavor. It taste just like it should. Want the milk mixture to thicken properly? After you have melted the butter and wisked in the flour add the milk slowly while whisking. Lightly boil for a few minutes until it coats the back of a wooden spoon.

Easy Apple Strudel

it's in the oven and looks very nice. No oozing. To seal the puff only wet one side. I folded mine so the the puff did not overlap. They met in the center on top of the filling. Seal the edges with just water, pinch the seam across the top, run a knife and create equal slashes across the sealed pastry. I also pre cooked the apples in a skillet with just an 1/8 cup of water and a teaspoon of tapioca. You can also use corn starch or flour in place of the tapioca.

Minestrone Soup I

This recipe has so much flavor. I had a red and green pepper that i diced up. Anytime I make a soup I slice the veggies and meats bite size. Makes it easy to get a taste of all the ingredients.

Honey Wheat Bread

How do you give wheat bread 5 stars? I like the method. combining most of the ingredients in a sauce pan and heating to 120 then slowly pouring over 1/2 the flour /yeast mixture while in the mixer is on stir is a simple way to get the yeast working. After it is combined add more flour until it is no longer visibly wet. You can then change to the dough hook or turn out on the counter to knead. "Kneading adds air" The bread is dense but you can clear that up by adding wheat gluten. I added 1 tablespoon.

Savory Pork Stew

This is a fine recipe. Because it is a stew a crockpot is best to keep it from burning. But the cook time is off by about 2.5 hours. Set your crock to high to get the stew to bubble then lower it and cook for another 3.5 hours.
