Artichoke Spinach Lasagna

Looking for a meatless dish for a meat and potatoes family can be a real challenge. This one did the job. Everyone loved it. Did make changes based on personal preference and other reviews: Used fresh spinach!! It's less runny and better tasting. Did not cook the noodles. I was worried about that, but it worked great. Baked for 50 min, uncovered and baked 10 min more, then let rest for 10 minutes--no problem with it being runny like others did. Used basil instead of rosemary. Like someone else said, it was not a very "deep" dish lasagna. Next time I might consider adding a few more ingredients and an additional layer. I think black olives would be a nice addition, too! Thanks for the recipe!

Sarah's Applesauce

Very easy, just the right amount of cinnamon/sugar, but I did use 1 extra apple (jonagolds I had that were getting too soft). Cooked in crockpot on high 4 hours. Better than store-bought applesauce!!

My Country Style Steak

Excellent, easy recipe. I did chop an onion and sauted in olive oil. Instead of water, we added beef broth-might be a bit too salty that way. Will try 1 cup broth/1 cup water next time.

Corned Beef and Cabbage

Very good, but we didn't care for the sweetness. Next time I will omit the sugar. The meat was delicious, but not as tender as we are used to. This was the first time I ever put the meat on top, and I wont do that again. Over all, very tasty!

Brown Sugar Meatloaf

I have been making this meatloaf for quite awhile, now. My family loves it. Anyway, I made it the last time and realized I had forgotten to put in the brown sugar and ketchup. So, instead, I sprinkled sugar (less than what is called for) and spread the ketchup on top, and it was even better.

Elaine's Sweet and Tangy Loose Beef BBQ

I have been looking for a BBQ beef recipe for years and just couldn't find the right one. This is it, thanks Elaine! I did add some chopped onion, and the cook time is WAY off as noticed by many. Plan at least 6 hours on low before being able to shred. Maybe it would help to chunk the meat beforehand.

Marinated Rib Eyes

I found this recipe in Taste of Home several years ago. It is the best marinade! We have used it on several cuts of beef as well as chicken and shrimp. The ingredients seem bizarre, but the meat comes out tender and full of flavor.

Jim's Apple Waffles

Sorry, Jim, but these were awful. With all the powdered milk, they didn't even smell good. The batter was too thick. I ended up adding about half a cup of sugar and a cup of water before my kids would eat them, then they joked about using them as hockey pucks because they were so tough.

Breakfast Casserole

This was great! I tweaked it a bit with some suggestions from other reviews. I added onion soup mix to the chicken soup. I only used half a chopped onion and sauteed it with the ham. I didn't have chicken, so used two cups of ham instead and used the frozen potatoes with onions and peppers. Cooked 45 minutes instead of 30 and it really could have gone longer. The chips on top are great, but next time I wont drizzle butter on it. I dont think it needs it.

Baked Pork Chops I
