Cheesy Shrimp Meltaways

These have been such a big hit everytime I've made them. I also make them with crab meat in place of the shrimp. The only complaint I get occasionally is that they are pretty salty, but that's what a lot of people love about them. Regardless, they are so easy because the freeze so well. I slice them into quarters with a pizza cutter prior to freezing and they can go straight from the freezer to the oven to the serving platter.

Chicken Florentine Casserole

This was really good and easy. I used some frozen pre-cook chicken strips because that is what I had on hand. Wilted fresh spinach with the garlic and lemon juice, and used store bought bacon pieces. It was quite yummy over angel hair pasta. It would probably be company worthy if I had used whole chicken breasts and fresh bacon (and fresh spinach and mushrooms, of course). Thanks for sharing.

Viennese Crescent Holiday Cookies

Used almonds instead (already had them on hand), and rolled into balls since so many said they had a hard time with them breaking. VERY delicious. Big hit at cookie swap and Christmas.

Party Mimosa

Love these. Just a slight variation on a mimosa or Bellini for a crowd. I make several batches of this each year for my Christmas cookie swap and any brunches I do through the year. It is always a big hit.

Garlicky Baked Butternut Squash

I make this about once every two weeks in the fall and winter now. We LOVE it. I never use the parsley however - not that I'm anti parsley, just don't have it on hand. Also, I do 425 for about 25 minutes.

Creamy Banana Pudding

I had this a few years ago at an office gathering and it has been a summer staple ever since. It is really rich, so if I'm making it for family, I use light whipped topping and sugar free pudding, but people rave about it as is. It's something that I even get asked to bring sometimes. A+ summer potluck recipe.

Broiled Tilapia Parmesan

I really enjoyed this and will definitely be making again. The only thing I changed was that I dredged the fish in Parmesan (the kind in the shaker bottle) prior to cooking so that it would have a crispy "crust".

Sweet Vidalia Onion Pie

A friend made this and I just had to have the recipe. It did not disappoint when I made it. I'm just sad that there were no left-overs. The only change I made was related to the cheese. I doubled the amount of cheese and mixed it in with the egg mixture. It wasn't necessarily on purpose, I just didn't read carefully enough, lol. It was fabulous if I haven't said that already.
