Cha Cha's White Chicken Chili

Reviewed: Jan. 22, 2012
This was quite good. I was serving to a 2 and 4 year old so I subbed green chiles for the jalapenos. I used ground turkey instead of the chicken just based on personal preference. I cooked the turkey with the onion, garlic and spices and then put everything in the crock pot for the afternoon. We added the cheese to the bowls when serving.

Amish Breakfast Casserole

Reviewed: Dec. 27, 2011
This was so so for us. I made for Christmas morning as something different from our usual breakfast casserole, but there was something about the consistency that we didn't care for - personal taste. I won't make again.

Pizzelles II

Reviewed: Dec. 2, 2011
1. These cookies are outstanding. This will be my permanent recipe. Adjustments: used real unsalted butter instead of margarine and used vanilla in place of anise (personal taste). 2. I'm not sure about the people who had 'soft' cookies- mine crisped up beautifully. My only idea is to make sure that you use an electic mixer for the eggs and sugar and make sure to beat long enough (when I thought they were 'fluffy' I kept going for a couple of more minutes). I usually skip sifting the flour, but I didn't for this recipe. Definitely sift. 3. The trickiest part for me is always figuring out the right amount of batter and the right cooking time. For my iron, a full tablespoon (measuring spoon) of batter and 1 min 12 seconds made beautiful cookies. 4. There was a little 'overhang' around the edges of some of the cookies- use kitchen shears to cut off any extra to make perfectly round pizzelles.

Baked Teriyaki Chicken

This was delicious. We substituted chicken breast for the thighs (personal preference) but made the sauceexactly per the recipe. We loved it- my 4 year old ate seconds. Served with white rice and edamame.

Turkey Enchiladas

Reviewed: Oct. 10, 2011
This is a great recipe for using leftover turkey. I warmed my tortillas in the microwave to save time, but otherwise I followed this recipe exactly. My onions didn't soften, and I didn't like the crunch, so next time I might try cooking the turkey with the onion before filling the tortillas or maybe using green onion. I will definitely make again next time I have leftover turkey.

Tangy Turkey and Swiss Sandwiches

Reviewed: Oct. 9, 2011
I gave this 4 stars bc I modified it slightly. I made the sauce per the recipe- it was delicious. Instead of buttering and cooking in a skillet, I wrapped each sandwich tightly in aluminum foil and baked for about 20 minutes to warm and melt the cheese. I will definitely make these again the next time I have leftover turkey.

Slow Cooker Turkey Breast

Reviewed: Oct. 7, 2011
When I first saw this, I was skeptical, but it was actually delicious! I took other reviewers suggestions and added a can of chicken broth, some onion and celery to the bottom of the crock pot, and then I smeared a few pats of butter on the sides of the crockpot. We had a delicious dinner and now have plenty of leftovers for turkey sandwiches this week. Never thought that turkey could be a work night meal, but with this recipe it can!

Baked Pork Chops I

Reviewed: Sep. 12, 2011
This was very good. I don't usually buy pork chops, but got some in a pack from Omaha Steaks, so was just looking for a way to use them. I skipped the frying step to save calories, time, and mess. Otherwise, followed the recipe exactly- everyone loved them.

California Grilled Veggie Sandwich

Reviewed: Aug. 23, 2011
This was outstanding! I couldn't find focaccia, so used ciabbatta instead. Even my husband (who usually complains when I cook vegetarian meals) said over and over how good these are. Will definitely add this to our regular rotation. We really liked the mayo spread- be generous with it as it adds great flavor. The amount specified in the recipe for 4 pieces of bread was just right so if you want to make more servings definitely make more sauce.

Phyllo Chicken Packets

Reviewed: Aug. 15, 2011
Loved this! My husband even ate the leftovers for lunch and he never eats leftovers! I followed the recipe exactly except for sneaking in a couple of extra sheets for phyllo for each chicken breast. I only made this because I had leftover phyllo and chicken breasts in the freezer and I searched on those ingredients and found this recipe. But this is a total keeper. This would be great for company or a ladies lunch. Thanks!

Roasted Brussels Sprouts

Reviewed: May 27, 2011
I have been looking for a good way to prepare brussel sprouts since we get tired of the same veggies over and over again. This was terrific. Next time I will cut them in half to get more crispiness since that is what we like.

Polish Cabbage Noodles

Reviewed: Mar. 6, 2011
This is outstanding. I always thought that there must be something tricky about this dish, but it really is so simple. I followed other reviewers' suggestions and it turned out perfectly: 1. Chop and salt the cabbage- let sit 10-15 min 2. Skip the onion 3. Saute cabbage in butter in a large deep sided skillet. 4.Add the cooked noodles to the cooked cabbage and let simmer on low to let the flavors mingle (because I salted the cabbage I had plenty of liquid for this step- I didn't have to add any liquid). 5. Season with pepper, but NOT salt (if the cabbage is salted, it will already be plenty salty)

Spaghetti Pie II

Reviewed: Jan. 23, 2011
Made this for the kids using leftover sauce from lasagna that I made earlier in the week. So I can't comment on the sauce in this recipe, but the overall idea and composition worked out really well. I only give it 4 stars bc I don't think I would ever make it for guests or an 'adult'dinner, but this is a great way to use leftover spaghetti and sauce to make a good kids meal.

Chicken Enchiladas II

Reviewed: Jan. 19, 2011
These were very good- my husband says to add them to the rotation. The reason for 4 stars? For a working mom of 2 it is a little time intensive for the result. I had to cook and dice the chicken one day, make the sauce and assemble the dish during a nap time, and then finally bake it the evening that it was to be served. The flavor was quite good and we enjoyed the dish, I just don't know if I will make the time investment again for this.

Peanut Butter Noodles

Reviewed: Dec. 30, 2010
This is delicious. We made it with Pad Thai noodles bc we couldn't find Udon. I added some shelled edamame to the water while the noodles were cooking so that we included our vegetable with the meal. It was great!

Homemade Black Bean Veggie Burgers

Reviewed: Dec. 12, 2010
I am going to give these 3 stars for now, but I'm not giving up. The flavor was delicious and the ingredients so healthy, but ours were just too wet inside. I will try again and maybe try other reviews to strain moisture from veggies or I might try to double all ingredients but still use 1 egg- somehow I have to get the moisture down. But I will definitely try again because if I figure out the trick then this will definitely be a 5 star recipe.
