Chicken Jalfrezi
Excellent! And not too labor intensive. Even my 22-month old devoured his portion. This will be a regular at my house.

Feta Chicken
I took one reviewer's advice and whirled the feta, fresh basil leaves, parmesan cheese and bread crumbs in a food processor, and I also put fresh tomato slices in with the stuffing before baking. I also made the assembly easier by pounding the breasts, laying the stuffing on one breast, and piling another breast on top. Then, when it was done, I just cut individual portions. YUM!

Sweet Potato Casserole II
Got tons of compliments, but it was a little too sweet for me. Next time I'll reduce the sugar (and fat) by half.
