Zucchini-Chocolate Chip Muffins
Not the prettiest muffins I've ever made, but tasty and moist. I doubled the recipe and used 1/2 cup of oil and 1/2 cup of applesauce. I think next time I will use half whole wheat flour to give them more substance (and make them a little healthier!).

Beth's Spicy Oatmeal Raisin Cookies
I agree with most; this is one of the best Oatmeal Raisin cookies I've had! I chose to add 1/4 cup more flour because I like my cookies cakey, and I decreased the ground cloves to 1/4tsp. Also I think next time I make these I will increase the cinnamon by 1/2 tsp.!

Pumpkin Bread II
Just made this and sampled it-yummy! I think I would add another tsp of cinnamon next time. I used 1/2 cup oil and 1/2 cup applesauce and reduced the sugar by 1/4 cup. I also baked it at *325. But over-all really good and moist!
