Spiced Sweet Roasted Red Pepper Hummus

mmmmm GOOD! I did add a tsp of Olive Oil. Even the kids loved this as much as I did, and I normally don't like Hummus.

Peanut Butter Balls III

Used 3C Powdered Sugar, 1/2 crunchy 1/2 smooth and a mix of semi & milk chocolate chips - also chilled the batter overnight before rolling into balls, and then chilled again before dipping in chocolate. YUMMMMMMMMMMMMMMMY! Very rich!

Margie's Sour Cream Pork Chops

I used 3 tblspns white vinegar, 1 can of broth, and Italian seasonings in place of the savory (didn't have it and we were snowed in) and also added a teaspoon of Cornstarch before pouring the sauce mixture over the chops. Served over egg noodles. When I have the chance, I'll use Savory, but it turned out DELICIOUS! The entire family approved so it will go into the favorites rotation.

Pumpkin Turkey Chili

I love this chili, after I make the following changes (too bland & thick otherwise): Add - 1 can chicken broth, 1 can black beans, 1 can kidney beans, 1 can diced tomato (2 total), 2 tbls Cumin, 1/2 tsp cayenne, 1 can diced green chilies. All of it goes into the crock pot where the perfect chili is created!

Gingered Sweet Potatoes

The Ginger brings such a TASTY zing to the sweet potato's! I had to change things around to make it work for me. I melted the butter in a sauce pan (NO OLIVE OIL), added all ingredients except for the sweet potato's (PLUS 1 TEASPOON VANILLA) and then put the sliced up potato's in and coated them. Poured all of it into a 9x9 glass baking dish, covered it, and stuck it into the fridge until about an hour before it was time to eat. Once removed from the fridge, I stirred again, baked at 350 (stirring halfway thru cooking time) for almost an hour. This allowed me to prep the dish way earlier in the day, and it was SOOOO easy & SOOO good! Yes, a bit sweet, but that's how they're supposed to be!

Slow Cooker Stuffing

Not the most appealing stuffing to serve, but the flavor is FANTASTIC!!! I wasn't a big mushroom fan, but tried it with Baby Bella's, and it added a wonderful rich flavor. I use seasoned dryed cubes (bag) and add only poultry seasoning. I prepare it the night before (minus the eggs), and then put it all together in the morning, cook on low and check for moistness every hour.

Chicken with Mango-Tomato Salsa

This was very fresh tasting, but a bit heavy on the tomato content. I did add a teaspoon of cumin to the salsa, more red onion, and salt & pepper to taste. We pan fried the chicken in olive oil, and seasoned with Smoked Paprika, salt & pepper. I will make this again, but with only one can of tomato. UPDATE - tried this again with only one can of diced tomato, and served it with sliced avocado on the side - PERFECT!!!

Lemon Pepper Green Beans

The green beans in the produce dept. looked like spinach, so I bought and used a "steamer" bag of green & yellow beans. Those cooked in the microwave while I prepared the almonds. FANTASTIC flavor and super easy. I doubt I'll ever try with fresh beans as it will take more prep time. I thought the amount of lemon pepper was fine.

Sour Cream Pork Chops

A decent "base" recipe, but it would've been quite bland. I added smoked Paprika to the flour mixture and also sprinkled it directly on the meat before I browned it (I used a Pork Shoulder roast) . To the sauce, I added 2 tsp's Worst. sauce and a can of Cream Mush. Soup. When it came time to add the sour cream, I added a tablspoon of cornstarch to the s.c. and while that was in the crock pot, I sliced up the meat, added it back to the sauce and then served over Egg Noodles. It turned out a lot like a stroganoff.

Curried Honey Mustard Chicken

Incredible flavor and SO EASY! I ran out of Curry powder and used Garam Masala in it's place, and will probably make it that way again. I doubled all of the sauce ingrd's so we'd have enough to serve over rice, but didn't double the butter.

Outrageous Warm Chicken Nacho Dip

I doubled this, using one can mild Rotel, one hot. Also added spicy Velveeta (and more than called for), Chipolte Taco seasoning, sauteed red onions instead of green, can of Green Chiles instead of Jalapeno and a very large can of black beans. FANTASTIC dip - warmed us up after Trick or Treating!

Easy Salsa Meatloaf

FANTASTIC! I will never make meatloaf any other way! I used ground sirloin, and did add a ketchup glaze/sauce to it 1/2 way thru cooking. Super supper with mashed potato's & a salad.
