Slow Cooker Stuffing
Not the most appealing stuffing to serve, but the flavor is FANTASTIC!!! I wasn't a big mushroom fan, but tried it with Baby Bella's, and it added a wonderful rich flavor. I use seasoned dryed cubes (bag) and add only poultry seasoning. I prepare it the night before (minus the eggs), and then put it all together in the morning, cook on low and check for moistness every hour.

Chicken with Mango-Tomato Salsa
This was very fresh tasting, but a bit heavy on the tomato content. I did add a teaspoon of cumin to the salsa, more red onion, and salt & pepper to taste. We pan fried the chicken in olive oil, and seasoned with Smoked Paprika, salt & pepper. I will make this again, but with only one can of tomato.

Lemon Pepper Green Beans
The green beans in the produce dept. looked like spinach, so I bought and used a "steamer" bag of green & yellow beans. Those cooked in the microwave while I prepared the almonds. FANTASTIC flavor and super easy. I doubt I'll ever try with fresh beans as it will take more prep time. I thought the amount of lemon pepper was fine.
