Awesome and Easy Creamy Corn Casserole
Great recipe! We love Corn just not canned corn. CHANGES: used frozen corn---steam bag then put it in an empty can for measuring. Used 2/3 of frozen tube southern style white sweet cream corn. Smothered 1/2 sweet vidallia onion and 1/3 red bell pepper in the butter ...added to mixture once cooled. Used Jiffy cornbread mix. Mixed the night before then refrigerated till morning. Baked the net day (am).

Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta
This was AMAZING! I had to OMIT the yellow bellpepper b/c for some reason i thought I read "yellow summer squash" so that was put in its place and it was divine. The dressing is really what makes this the BEST! SHRIMP: I doubled the dressing and threw about 1/2 cups worth over the shrimp before stir-frying. So the shrimp are nice and flavorful like the dressing.

Chicken Tortilla Soup V
This was a great recipe. I used Chipoltle Salsa and that was great! ALSO instead of chicken broth i had to use boullion. I happened to have Chicken Boullion and Chicken Chipoltle Boullion so that worked out well too! Awesome SOUP!!!
