I fixed a vegetarian Thanksgiving meal. No tofurky allowed, and everything from scratch.

Ugh... a cherry clafouti I made on a whim. I didn't even want to touch it. How I could mess that up, I don't know, but the whole thing was a soggy mess.

Chimichurri Sauce
This was a good marinade for the tilapia, that I made last night. I added more garlic, red wine vinegar,and a little pinch of sugar. I covered the fish with the sauce and a can of diced tomatoes. Baked for 30 minutes at 350. Topped with a sprinkling of parmesan cheese. Turned out really well.

Warm and Spicy Autumn Punch
I've been making this recipe every fall/winter for a few years now. While it's great on its own, I keep a bottle of apple flavored rum next to it, for those that want a little extra.

Mango-licious Tilapia
This was a very refreshing recipe on days when it's too hot for anything heavy. I added a little garlic and sesame oil to the fish (goes well with the ginger), and I cheat and buy prepared mango salsa at the grocery store. I let the fish sit in the mixture for about half an hour before baking. Served over whipped parmesan cauliflower, and I'm set for dinner and tomorrow's lunch.
