About this Cook
I love to experiment with different recipes. Here in Montreal we have such a wide ethnic variety that most ingredients can be found to make whatever you want. My greatest cooking influence was my best friend Jackie's mother - she used to be able to cook up simple dishes that looked/tasted so good with next to no effort. I love to cook for other people - I love them to sit in my kitchen while I chop/saute away. Also, I am a diabetic of 40 years - so I try to cook "healthy" ... most of the time - but I do like to cheat with rich and tasty foods from time to time - since you only live once! My favorite things to cook
Soups - I discovered how easy it was to make potato soup - and add things to it to make it out of this world. Desserts are a few of my favourite things to cook as well. Too many to list here that's for sure.
My favorite family cooking traditions
I come from a British background - where food tended to be bland and cooked till it was - I hate to say this - rubber. No traditions at all - except for El Toro pizza on birthdays. My Mum did not like to cook - but my Dad did and still does most of the cooking now that he's retired..
My cooking triumphs
When I left home at 18 - I didn't even know how to boil an egg - now I amaze myself at how many delicious meals that I can make!!!
My cooking tragedies
I thought the turkey was thoroughly thawed out - well - my husbands family are waiting - forks and knives poised in the air - ready to dig in - and the darn turkey was still FROZEN in the centre. Let's just say that we ate quite late that night - bit dried out - but we ate.

Puttanesca or Kalamata Kwik Sauce
This was a quick/easy sauce to make up! I added abit of red wine into the sauce/along with a few heaping spoonfuls of chopped canned tomatoes/abit of basil/fennel and it was AMAZING! I did add abit more crushed red pepper then asked for, as I like abit of heat. This is something I could easily make up on my sailboat for a quick meal - and not just at home!

Canadian Bacon Macaroni and Cheese
This was excellent! I added some garlic/onions like others had suggested. Also added abit of Tabasco/Worchestershire sauce - along with about a 1/4 thick Greek yoghurt. I topped it off with about 7 Saltines that had been crushed mixed with abit of Mrs. Dash and left over grated cheese. I placed this all into a casserole dish, and cooked for about 30 minutes until it bubbled and topping was brown at 350F. Served with a side salad - perfect meal for a diabetic gal like myself (am Type 1 of 42 years - like to watch my carbs - but this little "cheat" meal was so worth it!).

Easiest Eggplant
I did what many others had done - spiced it up abit - and also went one step further in making the meal into parmigani. It was delicious!!! I'm a diabetic - so am hoping I carb counted the eggplant properly. I will bake up my eggplant like this in future - less oils - and so tasty.
