Breakfast Casserole III

Yum! I halved the recipe (fed three of us) and used frozen cubed hashbrowns. Used garlic instead of onion, 3 whole eggs & 3 egg whites. Added a can of chopped green chilis and 1/4 cup of reduced-fat sour cream. Used reduced-fat mexican cheese blend instead of cheddar. Sprinkled sliced green onions on top in the last 5 minutes. I cooked in a 2 quart casserole, and it took longer to cook than the recipe instructed, I would probably use a 11x 7 glass pan instead next time. SOOOO good! There were no leftovers.

Veronica's Hot Spinach, Artichoke and Chile Dip

Perfect! I was tempted to put in the entire 4 oz. can of chopped jalapenos, I'm glad I didn't. We like spicy, but it was just right to appease everyone's tastebuds as-is. I used reduced-fat cream cheese & mayo, and a regular 14 oz. can of artichoke hearts, not marinated. I also used a three-cheese blend, parmesan-romano-asiago. Yummy!

Tomato Barley Soup

Good soup! I added some chicken for my hubby's benefit. Used veggie broth. The only herb I added was to simmer a bay leaf in the soup. I did throw a handful of frozen chopped spinach in for the last ten minutes. That made it perfect.

Ham and Bean Soup

I'm giving this 4 starts because I think when I halved the recipe I didn't use half the beans. My soup turned out rather... well, BEANY. Regardless, I still would use twice the veggies called for even at normal quantities, and I didn't care for the consistency of the meats after they simmered in the soup for 3 & 1/2 hours. I will try this again, I'm confident that it's good as written.

Chewy Coconut Bars

I subbed: whole-wheat flour, 1 3/4 cups natural turbinado sugar, Smart Balance 50/50 butter blend, 1 cup (unsweetened!) shredded coconut, 1 1/2 cups semi-sweet chocolate chips. UNBELIEVEABLE!!! Rich, yummy, delish. Next time I will sub 1/2 cup rolled oats for 1/2 cup of the flour. Took 30+ minutes to cook.

Slow Cooker Latin Chicken

I was looking to make soup with ingredients I had in the cupboard, used this for inspiration. (Did not slow cook.) The changes I made: used chicken breast, no red bell pepper, no cilantro, no allspice, included liquid from black beans. Added celery, carrots, frozen corn kernals, and 3 cups of chicken broth. I had an 8oz can of "El Pato" Jalapeno Salsa, it was perfect. Garnished with Frank's Red Hot Sauce. So delicious! Thank you for a wonderful base.

Tina's Shortbread Chocolate Chip Cookies

These are shortbread cookies, not sweet & gooey chocolate chip cookies! That said, we LOVE them! I used whole-wheat flour (skipped the sifting), smart balance 50/50 butter blend, and natural sugar. Added some extra chocolate chips to make up for the walnuts that I omitted. The cookies take about 22 minutes in my oven. YUM! EASY!

Cream of Asparagus Soup I

So good, but I did alter a bit. Sauteed 2 sliced red potatoes for about 10 minutes with onions, carrots, celery and garlic. Then added broth & seasonings, one cup frozen chopped spinach & 2 cups frozen broccoli florets, simmered for 10 more minutes. Added one can asparagus (cut into small pieces) and the half-n-half, brought back to simmer, turned off immediately. YUM! Did not need flour, not concerned about the soup being really thick.

Pumpkin Black Bean Soup

Surprisingly good! Only used two cans of black beans, didn't drain completely. I did not puree any of the ingredients. Added chopped celery and carrots, sauteed with the onions. Used veggie broth & 2 tbsp of apple cider vinegar. I really want to try this with 3 tbsp red wine vinegar next time. No need for salt - so many of the ingredients have it added already! Hubby garnished w/ tabasco, I sprinkled a little "Frank's Red Hot".

Hot Artichoke and Spinach Dip II

This was VERY good. I felt like maybe it was lacking something however, some kind of spice, maybe a little heat? I used a couple of splashes Frank's Red Hot Sauce per another reviewer's suggestion, I think I would use more next time. Or maybe a small can of green ortega chilis. Also, I used sour cream instead of mayo (per many reviewers), next time I will try as written.

Brownie Mix

This is a pretty good recipe, except: there is too much flour and too much sugar. I need to experiment more, but my basic feeling is that 1 - 1 & 1/4 cups of flour and 1/3 - 1/2 cup white sugar would be better. A pinch of salt is good too. I subbed a 4oz container of applesauce for 1/2 of the oil to cut back on fat. REALLY YUMMY WITH A LITTLE VANILLA ICE CREAM!

Microwave Caramel Popcorn

I lost this recipe and was glad to find it on Allrecipes! I use Smart Balance 50/50 butter blend, and two bags of microwave light butter-flavored popcorn seems to be the perfect amount. The micro cooking times in this recipe did not work for me, they are too long both for the caramel and the combined brown bag. The caramel bubbled up & over the top before I figured it out! Mixing in half a cup or so of semi-sweet chocolate chips in the brown bag makes the BEST chocolate caramel popcorn!

Side of the Trail Cookies

These cookies are very good. Not terribly sweet, which I prefer! The peanut butter flavor is very strong, I may cut back a little next time. I scaled the recipe down to 12 cookies and used Smart Balance 50/50 butter blend instead of shortening. These cookies taste even better the second day!

Super-Delicious Zuppa Toscana

I too subbed kale for the spinach. Next time I will chop the kale smaller and cook in the soup for about five minutes before I add the milk (I used lowfat milk). Made with 3 links of turkey italian sausage - in the casing, cut into very small pieces after cooking - and 3 pieces of turkey bacon, cooked separately and then added to the onion/garlic saute. Used baby red potatoes quartered, they cooked in about ten minutes. It was delish, could have been a little thicker, I might add a little flour next time, or maybe not...

Pumpkin Turkey Chili

This is such a good recipe! I did add some bbq sauce because it seemed a little bland to me, and I love bbq sauce in my chili! Used less peppers than called for, added carrots & celery. Only 1/2 lb of turkey and added a can of beans (why aren't there any beans???). Otherwise, perfect! We ate this chili with "Vegan Agave Cornbread Muffins" and reduced fat cheddar cheese on top of all. Heavenly!!!

Vegan Agave Cornbread Muffins

FANTASTIC! I used stone ground cornmeal and regular whole wheat flour (not pastry). These took longer than 20 minutes. Used 1% dairy milk - didn't have soy, and did use maple syrup instead of agave. We had to make a second batch right away because we ate the first six muffins so fast!!! I served with Pumpkin Turkey Chili (used morningstar ground beef substitute for turkey) and topped all with reduced fat cheddar cheese. Heaven!!!

Blue Cheese Potato Salad

TOO MUCH OIL!!! I had so much left over that didn't absorb. Eww! Otherwise, this recipe is great. I added celery, besides that next time I will cut back on the back a little on the bacon (personal preference). Didn't have enough green onions on hand, supplemented with red onion which was fine. The blue cheese flavor was very strong the first day, but mellowed out on day two.
