Jalapeno Chicken II

This really is a quick and tasty way to prepare chicken. I made it tonight for my daughter's birthday dinner and everyone loved it. I baked it at 350 for 40 minutes and then turned the heat up to 400 and baked it 10 minutes longer to crisp up the bacon. Based on other reviews, I used 2 strips of bacon. I look forward to trying it grilled because I'm sure that will bring out more flavor, but not until this cold weather goes away!

Maria's Rice

This rice is so yummy!! It's moist, flavorful, and best of all, easy to make. I used half the amount of butter called for and it was still delicious. This will be a regular side dish for me from now on.

Rock Salt Encrusted Prime Rib

I wasn't too impressed with this recipe. I had a 20 pound prime rib and this was not enough mixture to cover the whole roast. After roasting for 30 minutes, the paste had shrunk so much, I couldn't do any "patch" jobs, so I let it cook as was. Getting the crust off was a challenge because it was so hard, like a plaster cast. As I was breaking it off, pieces kept flying all over the place. The meat was delicious and moist, but I have had equal results with other recipes, and none of the mess. We had a party of 24 and though we all laughed and had a "crack at it", no one is interested in using this recipe.

Yummy Sweet Potato Casserole

I make this delicious dish all year long. You can use canned sweet potatoes and get the same tasting results. I've also used evaporated milk, and half & half before, when I was out of milk.

Asparagus Quiche

I made this for a baby shower luncheon and everyone loved it! The only change I made was the cheese. I used Monterey Jack instead of swiss, because I don't care for swiss cheese. It was delicious. This recipe is a keeper. It did take about 15 minutes longer to bake than the recipe said.

Nauvoo Gingerbread Cookies

I'm not a big fan of gingerbread cookies. I like soft cookies and gingerbread cookies seem like they're always hard. After reading all the reviews, I decided to make these. They were the softest, best gingerbread cookies I have ever tasted. Everyone loved them at our family holiday gathering!

Twice-Cooked Coconut Shrimp

This was VERY YUMMY!But, I didn't put them in the oven, I forgot that part of th recipe! They were still delicious. For the sauce, I just used apricot jam. BUT, had I read the nutritional info first, I may not have made them...

Grandma Johnson's Scones

The BEST, EASIEST SCONE RECIPE!! I go to an English tea house in Santa Monica, Ca and these scones are better than theirs.And theirs are pretty good. I made these for a ladies tea and everyone wanted the recipe. Try this recipe!

Elaine's Peanut Butter Cookies

This is a very quick and delicious recipe. Instead of flattening with a fork, I dropped teaspoons of the dough in mini muffin pans. I baked them at the same temp and time as the recipe said. When they came out of the oven, I immediately pushed an unwrapped peanut butter cup in the middle. Let cool before removing from the pan. DELICIOUS!!!

Apple Raisin French Toast Strata

This tastes wonderful! I made it for a baby shower and everyone loved it. It tastes real good with maple syrup, but it really has the taste and texture of a bread pudding. If you want a french toast texture, this is not it. But, don't let that stop you from making this, because it really is yummy.
