Taste was excellent; exactly what I envisioned! Added chicken for a hardier meal. WARNING: the appearance is kind of an icky, pale green. This cause my husband to turn his nose up at it. But if you're a fan of spinach, this is a great recipe.

Great tasting and very easy to make. Warning: when toasting your coconut, check it frequently. I found out the hard way that coconut burns very quickly!

My husband loved these; I thought they were just OK. I had a hard time "stuffing" the sweet potato balls--they ended up huge by the time I was finished! Also, the balls came out super greasy even though I have a timed deep fryer with a temperature gauge. I did add some sugar, cinnamon, and vanilla extract to the mashed sweet potatoes, which was yummy.
