Pumpkin Chocolate Chip Muffins

Excellent recipe. I used 1 1/2 cups sugar, 4 eggs and mini chocolate chips. Perfect. Sure to become a staple recipe in our family. I love how it uses a whole can of pumpkin too.

Hot Fudge Pudding Cake III

I love this recipe except that I use less brown sugar to avoid that molasses taste in the pudding. I remember being disappointed by that when my mom would serve it when I was a kid. This last time I substituted 1/4 cup brown sugar and 3/4 white for the brown sugar.

Lemon Poppy Seed Muffins I

Very good, but I intend to play with the recipe a bit more to see if I can get them to come out a bit more tender. The first time I made them I skipped the glaze and just added 1/4 cup lemon juice to the other liquids. And since lemon yogurt is unavailable where we are, I added 1/2 teaspoon lemon extract to 1 cup yogurt. Our family loved them!

Pork Chops with Pears

We loved the pear and pork chop combination. I will just have to experiment to figure out how to make this in the crock pot so the chops are more tender. Oh and I used more pears but not more juice for this recipe.

Blueberry Coffee Cake

I didn't care for the chunks of cream cheese in this cake. They didn't add to the flavor, but just made the cake heavy and lumpy. Maybe next time I'll try whipping the cream cheese with an egg and a little sugar and "marbling" it into the batter once it's in the pan. Might turn out a little more appealing.

Butterscotch Oatmeal

I too used 1/4 cup sugar. Husband thought it was OK, but a little too gummy. 14-month-old seemed to like it. 3-year-old was not deceived into thinking it was instant oatmeal. I thought it had pretty good flavor but not very visually appealing. Probably won't make it again, especially since it's so high in calories.

Margarita Pie

My husband rates this recipe an almost 4 stars. He really liked the pretzel crust. I give it 3 stars since I'm a "if it isn't chocolate, why bother" kind of dessert person. I followed the recipe exactly except I froze it. I can't imagine how you could eat it otherwise since the filling would be rather goopey if you didn't.

Brown Rice Lentil Salad

I cooked 1/2 cup brown rice, 3/4 cup dry lentils, chicken bouillon granules, 1 bay leaf in 2 1/4 cups water for 40 minutes. When it was cool, I added it to the rest of the ingredients in the recipe (substituting cilantro for the parsley). I loved it! We all loved it, including my 3-year-old and that's saying a lot!

Strawberry Cinnamon Oatmeal Muffins

Except for cutting back on the sugar, I followed the recipe exactly. Muffins weren't extraordinary. Not much strawberry taste. Muffins kind of crumbly from the oatmeal, I assume.

Simply Traditional Lasagna

Very good recipe. As with all lasagna recipes that use the ready to bake noodles, I find it a little dry. Adding additional sauce or even water would probably solve that easily.

Ice Pops

After tasting how sweet the first batch was, I added about 1 cup of extra water to the recipe. Doing so means this recipe makes about 20-24 standard size pops. We have a set from Tovolo. Even after adding the extra water, the pops are similar in texture to the store bought variety--not hard like an ice cubes. My 3-year-old and husband love them!

Kielbasa and Potato Bake

Followed some previous suggestions: 1) Fried the kielbasa with one small sliced onion and the minced garlic before adding to sauce. 2) Used 1 1/2 cups milk instead of 2 cups. 3) Added just a dash of salt. Can't imagine using the whole teaspoon! Will probably make again.

Barbecued Meatballs

I read some of the previous reviews and took some of their advice-- I used the equivalent Italian bread crumbs instead of the fresh bread crumbs and after baking the meatballs I cooked the meatballs and barbecue sauce in a crockpot for a few hours instead of putting them back in the oven. They made great barbecued meatball subs!
