Curry-Coconut Shrimp
I LOVED this sauce but did not enjoy the shrimp in it. So, the second time I made this, I replaced the shrimp with a can of drained & rinsed chick peas. It was delicious! The next time I make it, I will increase the coconut milk a bit. Also, I serve this over Jasmine rice.
