Rachel's Cranberry Chicken Salad

Excellent! This is my favorite chicken salad recipe. Easy to put together, fresh and flavorful. The dill adds the perfect touch. Rotisserie chicken works well in this recipe, too and is a great timesaver. I make this a lot for light suppers during the summer. Thanks, Rachel!

Scrambled Egg Brunch Bread

Simple and delicious! I made it for church breakfast where it got lots of compliments and I was asked for the recipe. It's great to serve at gatherings because it presents well and is easy to eat. Will be making this one again.

Mexican-Style Goulash

I'm giving this 4 stars only because I was out of tomato sauce and I had to use a can of creamed corn because that's all I had on hand. This is a quick, delicious meal and I'm sure it would have been better with the tomato sauce. My family loved this dish and I was asked to make it more often. Another great feature is that it can be put together with pantry staples. Just add ground beef and you're set!

Coconut Macaroons III

Easy to make, positively addicting and lends itself to variety...what more do you want in a cookie recipe? I made a batch for Easter, exactly as written, and am very pleased. I made several as thumbprint cookies, filling some with small, speckled jellybeans (really cute, like bird nests) and others with seedless raspberry preserves. Some I left as mounds and drizzled with melted semi-sweet chocolate chips. I used parchment paper and had no problems with sticking. Keeping the fingers wet while working with the dough is a must.

Easy Pavlova

At the suggestion of other reviewers, I used 1 cup of sugar so my review is based on that modification. This was my first attempt at Pavlova. Having sampled it years ago, I decided I had to make it at least once. I wanted to take it to a Christmas gathering. My first try at this recipe resulted in a tasty but overly browned creation that cracked badly and collapsed. Not to be discouraged, I scoured the reviews and picked up tips online, before trying again. I ended up with a beautiful, sublime Pavlova with a delicate crust and luscious, marshmallowy meringue inside. I topped it with unsweetened whipped cream, kiwis and strawberries. It was marvelous! First of all, Pavlova is like cheesecake in that you must leave the oven closed while baking. My old oven tends to run hot so I nervously opened it several times on the first try which caused the cracking and collapse. On the second try, I left the door shut and baked it for 45 minutes before turning off the oven and allowing it to cool for about an hour before placing the Pavlova on a rack. This time, the color was perfect and there was only minor cracking. The top did fall in a bit afterwards but it wasn't seen under the cream and fruit. I'm not sure I could have done anything to prevent that. I'm so glad I tried making this because it's such a wonderful, different dessert. Next time, I would sweeten the cream, based on the feedback I received. Rosina, thank you for posting this!

Thai Curry Tofu

I'm rating this based on a modified version. I added fresh carrots, broccoli and cauliflower towards the end of the simmer time. Other than this, I followed the recipe as directed. This was my first time frying tofu and it stuck to the pan, even with non-stick spray. Once everything was simmering, it looked and smelled wonderful. However, that's where it ended. Although I love curry, this dish was lacking in flavor and while I ate it, it received unfavorable opinions from my family. I won't make it again, sorry.

Nicoise-Style Tuna Salad With White Beans & Olives

Easy Batter Fruit Cobbler

I have to agree with the other 200+ reviewers that this is a winner. I made mine with fresh blueberries and followed the recipe as written. It was ridiculously quick and easy to put together and baked while we ate dinner. I served it with vanilla frozen yogurt. The only change I made was to decrease the baking time. I'm sure it's just as yummy with other fruits as well. Another fantastic recipe from Pam Anderson!

Perfect Berry Shortcakes

This review is based on a slightly modified version of the shortcakes only. I did not have butter or half-and-half on hand so I substituted equivalent amounts of Smart Balance tub spread and fat free milk. Even with these changes, the shortcakes lived up to their name. The dough was easy to handle and baked into attractive, generously sized cakes with wonderful texture and just enough sweetness. I added sweetened berries and Cool Whip to mine but if I'm feeling decadent one day, I may go with the full monty version as printed here. For now at least, the shortcake recipe is in my permanent file. Thank you, thank you!

Mini Salmon Loaf

I made this tonight for the first time. My husband, not a seafood person, went back for seconds. That speaks volumes! Since I needed to feed 3, I doubled the recipe using a couple of 6 oz. cans of boneless, skinless salmon. One egg was fine. The only thing I added was a light sprinkling of Old Bay Seasoning but otherwise I followed the recipe exactly and I made the dill sauce also. It turned out quite tasty! I served it with couscous and asparagus cuts for an easy, healthy meal. This is going to be a regular for us. Thanks for sharing!

Hearty Breakfast Cookies

This is an excellent recipe as is! I added mini chocolate chips to part of the batter for my chocoholic husband. Why buy prepackaged breakfast cookies when you can make them? Great recipe for adapting too and I can see trying with applesauce, flaxseed meal, wheat germ or dried cranberries for something different. Definitely a keeper in our house!

Blueberry Flax Pancakes

Excellent recipe! I'd never cooked with flaxseed meal. My family loved the pancakes and my 9 yr. old went back for seconds. While they were cooking, she wasn't crazy about their appearance as they varied slightly from the norm but they passed the taste test with flying colors. Even my husband was saying we should add flaxseed meal to everything. Thanks Freckles, for submitting this healthy recipe that tastes good!

Mama Bear's Porridge

This is very good! I've eaten oatmeal all my life but never thought to add eggs to it. I wasn't sure what to expect and was pleasantly surprised. My husband and I both enjoyed it but I still can't get my 9 yr. old daughter to eat oatmeal, even when made into "Mama Bear's Porridge". I'll keep trying but for now, this one will be in my file for Papa Bear and me.

Raspberry Spinach Salad

I have to agree with other reviewers that this salad is just fantastic! It's healthy and beautiful with a wonderful blend of flavors and textures, plus it was a good excuse to add a new vinegar to my collection. The only downside is that fresh raspberries are pricey here in FL, unless you hit a good sale during the summer.

Chicken and Broccoli Braid

Why have I just now discovered this? It's easy to make, looks great, tastes wonderful. How can you go wrong? I had a rotisserie chicken and a couple of cans of crescent rolls on hand and this was a delicious way to use them! The only thing I did was use roasted red pepper and I left out the almonds. Yum! I want to make this for my in-laws when they come to visit.

Apricot-Glaze Chicken

I appreciate a good apricot chicken recipe but this isn't one of those. My husband gave it 2 stars and I had to agree. This dish had an odd flavor and it's looks were unappealing. There are much better uses for chicken breast. Sorry, won't make this again.

Orzo with Parmesan and Basil

Outstanding side dish! I went a little nuts with the fresh basil but other than that, this dish has great flavor. I served it with a broiled grouper recipe from allrecipes and it was excellent. My husband and daughter enjoyed it and I will be making it again!

Biscotti

Best biscotti I've made! I love anise so I followed the recipe exactly. I drizzled some with white chocolate and left the others plain. They're perfect! My daughter and I tucked them into "end of the year" gift bags with tea and cocoa packets for her teachers. Thanks Jandee, for this easy, foolproof recipe!

Mindy's Macaroni Salad

Very good salad! I had a hankering for mac salad on Memorial Day(something about patriotic holidays, I guess!) and this satisfied it quite nicely. I gave it 4 stars because I had to change 2 small things: reduced the amount of sugar and substituted some chopped green olives for the pimento since I didn't have any on hand. There seemed to be a lot of dressing but the pasta really soaked it up. It also met approval with my husband and 8 yr. old. Will make again!
