Dill Sauce

Tender and easy to chew (post gastric bypass...gotta chewchewchew everything) but VERY bland. I used a lot more dill than the recipe called for and coated it with garlic and it didn't have much flavor. I drowned mine in the dill sauce (by Lisa) and it was really good with that.

Pork Chops in Red Sauce

It was good but not great. I'm s/p gastric bypass so I subbed the tomato soup for a can of sauce. Added italian seasoning and garlic powder. I may make this again and do two cans of tomato paste with the bouillon to make it more like a gravy. They were tender and very easy to chew to death...another important aspect for post WLS.

Asparagus Parmesan

Very easy to make...I cut down on the amount of oil and sprinkled it with some garlic salt as well. Great recipe and I've already made it more than once.

Stir Fried Asparagus

I omitted the onion and garlic (no onion and I usually use some garlic powder but forgot :P) and I cooked the asparagus with the teriyaki sauce. I also added 1/4 cup chopped almonds. My husband doesn't like vegetables but he asked for more of these!

Bacon Chicken I

I made this in the crockpot when I forgot to take something out of the freezer and had no clue what to make. Threw the frozen chicken breasts in and poured the soup over it. I don't like using milk in the crockpot except for at the end and I just left it out. I used bacon crumbles instead and threw those in there with a can of water and 2 chicken bouillon cubes. I didn't eat it immediately and took mine to work for later...it smelled awful but the chicken was incredibly tender and it was actually very good. Will make this again every once in awhile.

Apple Pork Chop Skillet

Don't cut the apples in too small of pieces or they will be too mushy. Also..we left the skins on and they were a little tough. Son wasn't too thrilled with it but hubby liked it and he's just as picky. He even made it a second time himself so it's pretty easy to make!

Aimee's Quick Chicken

This was great! Also wonderful for those that are watching carbs (only 6.6 carbs per serving). I think I might have used too many bacon bits though because the bacon was a little overpowering but the family loved it. Another quicky variation is just the chicken, bacon bits and a jar of the reduced fat alfredo sauce (Ragu brand)and parmesan cheese sprinkled on top. That's quite yummy too!

Mouth-Watering Stuffed Mushrooms

This was my first time making stuffed mushrooms and after reading several of the reviews I decided on how I would make mine. The full amount of cream cheese was enough for 24 mushrooms and I placed a bit of chopped proscuitto in the bottom of each mushroom before placing the cheese mixture on top (which was wonderful). I then sprinkled garlic and herb bread crumbs over them and drizzled melted butter over all. Baked for only 15 minutes and broiled for the last 5. They were wonderful. I plan on making these when my Mom and Grandmom come to visit in the fall. Thanks a bunch!

Brown Family's Favorite Pumpkin Pie

The struesel topping really made it great. Easy enough for my 12 year old to make by herself. Husband doesn't like pumpkin pie but he said this one was "not bad" which means he still didn't like it but it was good for pumpkin pie :P Will plan on making this one every Thanksgiving. Thanks!

Spicy African Yam Soup

This wasn't too bad. My husband is very picky and he actually liked it. I also took the left overs to work and several people tried it and they liked it although one said it looked "nasty". My kids also didn't like it. I doubt I will make this again.

Slow Cooker Chicken with Mushroom Wine Sauce

This was a great throw together when I had no idea what to make. I used cream of chick, garlic salt and italian seasoning (all I had)and didn't add any milk in the beginning..put a half soup can in at the end and it was awesome! The sauce was sssoo good over rice...I'm going to do it with pasta next time...maybe some kind of garlic and pepper pasta.

Barbecue Beef Cups

I used two biscuits together and had a lot of trouble getting them to go up the sides of the muffin pan. They worked out pretty well and I made a double batch of the beef and put half of it in the freezer. My kids loved them! I also wrapped each cup individually in colored saran wrap which made them easy to grab.

Basic Yankee Bread Stuffing

I made a few changes and it ended up just like my Mom used to make...no chicken broth, 2 rolls of sausage (don't drain) and a stick of butter with the celery and only one onion. And lots of sage and poultry seasoning! The actual stuffing out of the bird was terrific. Cutting the bread in small cubes also helps keep if from being too dry.
