Egg Free Chocolate Chip Pumpkin Cookies
These are kind of addictive. :) I used fresh cooked pumpkin, ww pastry flour, earth balance margerine, and vegan chocolate chips to veganize them. While one person in my office (who favors McDonalds) said they tasted "too healthy" everyone else seemed to gobble them up. I'm going to try them again sans chips -perhaps with the spice recommendations of other reviewers. These are a great fall cookie!

Vegan Chocolate Cake
This is great! I doubled the recipe and used vegan sugar and it was amazing! Kept well in the fridge too!

Tempeh Mock Tuna Salad
YUM!! I will confess... I had my doubts about this while I was putting it together. I played around with the recipe a bit - using sweet pickles instead of dill, adding chopped carrots for extra crunch, and skipping the seaweed, simply because I didn't have any at home (tho I might get some now simply for this recipe!) This is great straight out of the bowl, and I'm sure it will only get better as the flavors meld. I'm planning to enjoy a big scoop of this on top of a green salad... YUM! Thanks.
