Alaska Salmon Bake with Pecan Crunch Coating
Quick, easy, tasty, impressive & healthy! Used feedback from others - used prepared honey mustard, added some garlic, used panko breadcrumbs to reduce breadiness and increased pecans for crunch. "Marinated" salmon in dressing prior to adding panko/pecans. Baked according to directions and it came out perfect. Served with brown rice and steamed veges - left enough calories for dessert! YUM!

Pumpkin Cream Cheese Muffins
needed more flavor - added cinnamon & allspice, but still needed more. easy recipe that went over well, but putzy to prepare (batter up sides, cream cheese in middle, batter on top, etc.). i will make them again with added spice and time on hands.

Man Pleasin' Jambalaya
5 stars as prepared using comments from others! This is a great weeknight shortcut version of the much more time-consuming jambalaya. Based on others comments: used andoille sausage, skipped carrots and mushrooms, substituted poblano for green bell pepper, reduced broth, added diced canned tomatoes with juice, added lots of garlic and cajun seasoning to taste. We also added frozen shrimp near the end and let the mixture simmer a little longer. BIG HIT serving a weekend special for company dish on a weeknight!
