Hello! My name is Corrine (but I go by Corrie) and I'm a recent transplant to the beautiful state of Arizona. I grew up in a small town in Eastern Washington, and relocated to Tucson to be with my fiance after my first marriage broke up. I enjoy the Southwest more than I thought I would and am learning to love foods I never did before - anything with avocado being a big one!
My favorite things to cook
I love to bake...I made Mel's Magnificent Chocolate Chip Cookies yesterday and loved them. Cakes and quick breads are also high on my list. I cook for a guy that loves to eat, so pasta is high on the list, as are casseroles and anything that comes together quickly and tastes good.
My favorite family cooking traditions
I will always remember Thanksgiving and Christmas fondly - making pies and cookies with family and friends in my parents' kitchen...endlessly rolling out batter for fattigmann, frying them and dusting them with powdered sugar.
My cooking triumphs
The first time I made homemade pudding and had it turn out perfectly, I was more pleased with myself than I thought possible! I also remember the first time I made a bundt cake (and had it turn out of the pan looking just like the picture)...I was more proud of myself than I thought was possible.
My cooking tragedies
Accidentally mistaking a cup of sugar for a cup of flour when I was making roux for potato soup.

Pork Chops German Style
These were delicious! My husband raved...and he usually thinks that cooking pork chops in anything but cream of mushroom soup is too complicated. I used a combination of whole-grain Dijon & a sweet/spicy garlic mustard to make them, and it was well-received by my dinner guests for sure. My husband and I were fighting over the leftovers for lunch the next day!

Mendocino Chicken Salad
I made this without the celery because I didn't have any on hand...and I didn't miss it! This is the best chicken salad I have ever had. I also took the advice of the first reviewer and just marinaded some chicken breasts in liquid smoke, olive oil, a bit of mesquite seasoning and a little bit of water. Toasted the almonds because I like the flavor better that way, eyeballed the basil and the mayo. I hope that I have enough for lunches for the rest of the week. YUM. Thanks, Kristine!
