Lentil and Sausage Soup

Really delicious! I added extra garlic and herbs and used small french green lentils. Really great texture on the lentils!

Tomato Enchilada Bake

I thought, as many others here, that this was a good launching point for some more complexly flavored enchiladas. In the filling, I added black beans, frozen corn from my garden, 1-2 tsp. cumin, 3-4 tsp. chili powder, and another couple handfuls of shredded cheddar cheese. For the sauce, I used 1/2 jar of hot green chile sauce (El Pinto) and 1/2 jar of homemade salsa. I spread a little of this sauce on the bottom of the pans before I put the enchiladas in. Baked them covered for 35 mins at 400, then 10 mins more uncovered at 350. Sprinkled with cilantro to make them taste fresher!

Steamed Mussels with Fennel, Tomatoes, Ouzo, and Cream

We couldn't finish the mussels we made in one night (we had steaks with them!) so we saved them in the fridge and re-heated them the next day with some additional cream. Still delicious....

Buffalo Chicken Wings II

Hawaiian Chicken Kabobs

I used fresh pineapple. These were so good that at my birthday luau last year they disappeared so fast I nearly missed out on trying them! The last one that my boyfriend had saved for me I got one bite of and then it got drug off by an ill-behaved dog. The one bite I had was very tasty though! Be sure to get rid of fatty pieces on chicken.

Ultimate Twice Baked Potatoes

Right, so it would be difficult to make these taste bad, what with the bacon, butter, creams and cheeses. They were great for lunch the next few days, but it might have been nice to try and make them taste good without all the fatty fat fat.

Cranberry Orange Cookies

Delicious! Fresh cranberries give the cookies a nice chew & zing. I probably added twice as much zest to the icing & you could really taste the freshness of the oranges. I baked them & then stored them overnight in between sheets of parchment paper. Still moist the next day. Thank you for this recipe!

Crunchy Vegetable Dip

Good flavor for so few ingredients! I didn't have lemon juice so I used lime juice, and I used parsley and 1 small clove of garlic (really finely minced) instead of green peppers. I also whipped the cream cheese & mayonnaise for a little while to make it fluffy.

Holiday Cranberry Sauce

I couldn't stop sampling it on the stove last night - it's delicious - but it only needed a little over half the sugar. I doubled the recipe & used three cups of sugar & it was MORE than enough. I added a few tablespoons of orange juice & the zest of one lemon, too, which I think added a little variety of tartness to it.

Cream of Fresh Tomato Soup

I followed "Ashley's" instructions here & added a good bit of garlic powder. Pressed it through a wire mesh (saved tomato & onion chunks to cook with ground turkey?) and mixed it with the roux, which makes the soup thick and rich. Not bad with the additional canned tomatoes.
