Golden Coconut Almond Muffins

really delicious muffins. the only problem was that i made them a little too big (only 10), so that when i pulled them (gently) from the pan, the tops came off. next time i'll make them smaller so i come out with 12 and they are easier to remove.

Carne Guisada II

wow, this stew is really, really good. my husband and i loved it, but the kids wouldn't even try it. i used canned chilis and cooked in the crock pot.

Aussie Chicken

it seems like the sauce was too strong in flavor, also the chicken had to cook much longer - so i wished i hadn't cooked the bacon to the crispy stage as the recipe directed.
