Cucumber Sandwiches I

Reviewed: Apr. 22, 2010
This is a nice, light snack or appetizer, especially for summer. I used Philadelphia light yogurt cream cheese, and it had a nicer and lighter taste... and in addition to that I also sprinkled the cucumber slices in a separate bowl with lemon and a pinch of salt first... and finished with a bit of dill sprinkled on top! For my bread, I used blackbread (I guess it's similar to pumpernickel - but it has sunflower seeds in it... totally delish!)

Pancakes

Reviewed: Nov. 16, 2009
This recipe was great, simple and handy! To make it it more healthy, I used a mixture of flour... spelt flour and wheat flour!! In addition, I added a dash of nutmeg and a teaspoon of cinnamon to the flour and stirred well. I didn't have self-rising flour at home, so I made my own. To make your own self-rising flour - for each cup of flour - you just need to add 1/4 to 1/2 tsp salt, and 1, 1/2 tsp baking soda and sift together - voila! And to make it even more healthy - and flavorful, I used reduced sugar applesauce instead of syrup, and garnished with half of a small apple and half of a small banana in slices mmm - hubby cleaned the plate! (Look for a picture - I added to my review) Yum! Thanks for sharing your recipe - I've already shared with my friends. :-) Will definitely make it again!

Lemon Poppy Seed Muffins I

Reviewed: Mar. 21, 2009
I just made these, they taste good - but I would now make the following adjustments. I followed reviewers advice. First of all, 12 oz of lemon yogurt IS enough! Also, I would use 1/3c. veg. oil and poppy seed instead of 1/4 (that's too much) - **also - take it literally when they say LIGHTLY GREASE THE PANS - ESPECIALLY if you have non-stick pans (they still need a bit) - In addition, I tried it both ways - with the high heat and 20 min will nearly burn them, 15-17 min at 350° is best - keep an eye on them! Will probably make them again - but this time with these adjustments!

Sweet, Sticky and Spicy Chicken

Reviewed: Mar. 9, 2009
This is an awesome recipe! However, I did do some adaptations (thus only 4stars)... I rolled the chicken pieces in rye flour, (they browned sooo nicely - and rather quickly - on med high heat.)used a bit of extra garlic, added some chopped red onions, didn't have hot sauce so I used sharp paprika... I used raw brown sugar (along with the rye flour it is a healthier option than the packed br. sug.) I also didn't have any problems to make the chicken sticky... to make a little more sauce - I added a bit of very hot (nearly boiling) water and stirred immediately. My husband loved it - was asking for more, I will DEFINITELY make this again!!!!!!!! (I served with broccoli + Basmati rice)
