Kale and Banana Smoothie
I know the recipe is probably wonderful, but the aftertaste of raw kale was very unpleasant to me. The smoothie sans kale would be very nice I'm sure.

Red Enchilada Sauce
Very simple and inexpensive to make. I used the leftover sauce to make a layered enchilada casserole and it was really, really good!

Mexican Rice II
I usually use a different recipe for rice when I cater, but I tried this one on a whim and had loads of compliments. I'll always use this one!
