My favorite family cooking traditions
There used to be a lot of family traditions growing up. Unfortunately, most have disappeared. Christmas Eve was always the tradition 7 Fishes, with pasta and a fish sauce, batter dipped fried cauliflower and broccoli...shrimp and scallops too. Easter was always the homemade rice pies, pizza pieana, lamb...homemade raviolis. During lent my Grandmother would make homemade pizza or thick potato/onion fritatta in a black cast iron pan....on winter's first snowfall you would find her in our kitchen shed, standing on her stool at the stove stirring a huge pot of homemade polenta. The gravy was on the back-burner and by dinner time it was plated hot polenta, meatballs, sausage and braciole. This was living! Her homemade gnocchi were dumplings of happiness....the best. Her ravioli were just incredible. I know she's in heaven cooking for everyone!!
My cooking triumphs
-The first time I made osso bucco and it turned out perfect....incredibly easy. -Then there was the night at friends' house, during a rain storm, where I had just started prep shrimp risotto for dinner and the lights went out. I had to cook by oil lamp and candle light ... but the risotto was the best I ever made! -Sausage Stuffed Acorn Squash one Thanksgiving were the hit of dinner.

Chicken and Red Bean Enchiladas
I actually love this recipe but have made some personal changes. I love using rotiserrie chicken; saves so much time. I found El Paso Enchilada Sauce in a can at my local supermarket. I use flour tortillas because I have never tried corn; I am more used to using flour ones. Sargento's has a low-fat Mexican shredded cheese blend that works great with this dish. I use black beans and corn; they are delicioso!!!

Spinach and Orzo Salad
What a great salad for an outdoor party. Served it many times and everyone raves about it. I alter it by adding sliced grape or cherry tomato halves. Adds a little color to the salad. It is absolutely delicious and I have passed on this recipe to all my friends.
