About this Cook
My husband and I have 4 kids, we homeschool and recently moved to the mountains. I love to cook now that I know how but I was pretty hopeless until I found this website! It was the reviews that made all the difference. I learned how to make substitions, what ingredients would taste good together and some great techniques that I wouldn't otherwise have known, like how to fry corn tortillas just til they're soft and pliable rather than too long so they're brittle or rubbery.
My favorite things to cook
Soup - hands down. Oh and eggs - quiche, scrambled, fried - all of it - they're my comfort food! Oh yeah - and cakes and cookies too - mainly chocolate! For main dishes, I tend to lean towards the ethnic - Mexican, Italian, Greek, but it has to be quick and easy! My husband and I love different flavors. It's kind of a balancing act though with 6 in the family, not everyone is going to like too many different things.
My favorite family cooking traditions
We don't have any ongoing traditions. My kids make me breakfast in bed on my birthday and Mother's Day - that's about it. Can't remember any as I was growing up besides Thanksgiving. My dad still cooks the same things every year and I still love it!
My cooking triumphs
Learning to cook at all! When I discovered this site is when I really learned how to cook! My first Thanksgiving dinner was a success despite all I did to ruin it! The turkey was perfect! And my first lemon meringue pie (Grandma's Lemon Meringue Pie on this site). My husband is still raving about what a genius I am!
My cooking tragedies
When I was 18 I was trying to help my aunt cook French Toast for a work crew. I grabbed the cinnamon to "sprinkle" in the batter but I didn't notice there weren't any sprinkle holes! I dumped half the bottle of cinnamon in the mixture and my aunt had to come rescue me! I don't think anyone died but I didn't try cooking again (besides Kraft macaroni and cheese!) for a long time after that!

Ronaldo's Beef Carnitas
This was ok. Seemed like all I tasted was the chile powder. It was pretty good the next day to put in tortillas. Probably won't make again or if I did, would have to play with the seasonings.

Potluck Rice Pilaf
This was great. Everyone loved it. Nice side dish for just a few ingredients. Only thing I would change is decrease the water a bit - the rice was a bit on the soupy side. That could just be me though - I've never had much luck with rice! Nevertheless, I'll make this one again.

Best Spanish Rice
I loved this because it was simple and had great flavor. I made it as a side to the Slow Cooker Chile Verde (on this site) and it was very good. Will probably not need to try any other Spanish rice - this is perfect.
