Lemon-Maple Butternut Squash
Maybe my squash was too small, but this turned out too watery and sweet.

Brown Rice Breakfast Porridge
This is a great alternative to oatmeal in the morning. I made it vegan by using almond milk and taking out the butter and egg I also added some butternut squash puree and flax seed.

Italian Summer Squash Polenta Bake
This was a great way to use up some vegetables. I made a few changes: I cooked the polenta from scratch and didn't fry it in oil. I left out the carrots and added sliced tomatoes and basil over the sauce. Delicious!
