California Roll Salad
This was so much easier than making sushi - and tasted just as good. I used brown rice and increased the amount. I left out the lettuce, but added ginger, sesame seeds, and strips of seaweed.

This was delicious! I used fresh tomatoes instead of canned and added a little lemon juice. I served it on some crackers. Thanks for the recipe!

Brown Rice and Black Bean Salad
With a few modifications, this turned out great. I served it as a warm dish. I cooked the rice in a rice cooker and then added the other ingredients to the cooker after the rice was done. I used fresh veggies instead of canned and added cumin and coriander to give it some more flavor.
