Coconut Chocolate Creams

These are great! They are VERY rich, though, so they don't have to be made very large, a little bit goes a long way. I even made them wrong (add the milk after melting the chocolate) and they turned out fine. I didn't use cherries b/c I didn't have any on hand. Very tasty. Got second place in chocolate coconut candy at the fair.

Barbecued Beef Sandwiches

Clark's Quiche

This quiche is phenomenal. I made it for a competition and the only reason it didn't place was because I used a cheap store-bought crust (BIG no-no - it tasted waaayyy too floury). I can imagine if you make it with a homemade crust it would be absolutely perfect. I am DEFINITELY holding on to this recipe. All the flavors blend marvelously, and the sour cream mixture at the bottom is amazing. This one is truly a keeper. Make this now!

Sam's Famous Carrot Cake

Absolutely delectable! This carrot cake is amazing! The pineapple, walnuts and coconut give it a distinguished taste. I took this to the restaurant I work at and everyone loved it! The manager and the cook both gave me their compliments - they couldn't keep their hands off them! I give this recipe two thumbs way way up.

Apple Cake in a Jar

This cake is absolutely delicious! It is extremely moist and the apple flavor is perfect. My friends were a little put off by the idea of cake in a jar, but they agreed that it was great. I had to bake them for about 10 minutes longer because the cake at the bottoms of the jars wasn't quite done. Other than that, a very splendiferous cake, two thumbs up!

Peanut Butter and Jelly Pie

This pie is great! It's SOO easy and tasty. I made it and entered it in the Iowa State Fair in open competition. I didn't have very high expectations for it going in since it seemed so simple, but the judge loved it! She gave it an Honorable Mention (which are only given out occasionally). The judge loved how you could taste the peanut butter yet it wasn't too overpowering. I used regular cream cheese instead of light (only because I couldn't find light at the store). This is an award-winning pie! Give it a try!!

Anzac Biscuits I

These cookies are great! They have a great crispy texture and taste awesome. The only thing I did different was toast the coconut and use Karo light corn syrup. I entered them in open competition at the Iowa State Fair for Ethnic Cookies and they placed second! The judge just loved their crispiness. I highly recommend these cookies, especially for those who love a good crunchy cookie.
