Insanely Amazing Jalapeno Cheese Dip

Made for a tailgate party and the recipe was for by several people. I baked in a casserole dish until it was bubbly and slightly browned on top. Used 1/2 cup of mayo and 1/2 cup of sour cream. Also added a minced fresh clove of garlic to the dip. I took fresh sliced sourdough bread and lightly brushed melted butter with a little fresh minced garlic. Cut into bite size pieces and put on a cookie sheet and baked until lightly toasted. A keeper! Will double the recip next time. BTW...as another reviewer mentioned, do not use the canned parmesan cheese. Either grate yourself or get in a bag in the dairy department of your grocery.

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

Had all the ingredients on hand for a quick dinner. I cut down the recipe to 1# of ground beef, therefore, didn't want to open a whole can of tomatoes for this one recipe. I had some homemade salsa on hand, so used it instead. Didn't really see the need for the cornmeal, so didn't add it. BF liked it, so looks like we'll be having this again. Much better than the package stuff.

Vegetable Wild Rice

Flavors were great! I used fresh rosemary and thyme from my garden. I'm rating it lower because there is way too much liquid in this. My gut instinct from the beginning was that it was too much and I should of cut back, instead followed the recipe. Rice was soggy. I've never heard of a rice recipe, where you drain it at the end. I think if the liquid proportions were correct this could be a great recipe, as the flavor was very good.

Baked Salmon Fillets Dijon

Best Chocolate Chip Cookies

They were pretty good. I also think they are a little too sweet. I used semisweet morsels and refrigerated for a few hours. I measured by the spoonful, rolled in a ball and then slightly flattened on the cookie sheet. They all came out to be about the same size. Baked for 11 minutes on parchment paper.

Spicy Honey Mustard Pork Roast

Maybe our tastes are a little different, but my boyfriend and I weren't too impressed. I had high hopes for this recipe since it got such good reviews. We were going to a potluck and I was looking for ideas for a pork roast. I was actually a little embarassed to bring it. After it was done cooking, it just didn't seem seasoned enough. I added more salt...a little garlic powder and some parsley to let set for awhile before serving to spice it up. There were plenty of leftovers, so I'm guessing the other people weren't too impressed either. Sorry for the bad review, but I'm just being honest with my our opinion.

Shepherd's Pie VI

I had certain ingredients that I wanted to use before going bad, so decided to use this recipe. After reading reviews, I didn't want to chance a "bland " dish, so decided to take some of the suggestions. Here's what I did: First I boiled carrots (threw in extras) in salted water. Later mashed them with some butter. Boiled potatoes (threw in extras) in salted water. Later mashed them with salt, pepper, butter, sour cream and two roasted cloves of garlic. Added shredded cheese to potatoes. Sauted finely chopped celery and small onion. Then added lean ground beef seasoned well with salt, pepper, two cloves of garlic minced along with Emerils Essence and some worcestershire sauce. After draining grease, I put meat in a small rectangular cake pan sprayed with Pam (2qt). Put frozen peas and corn (defrosted in micro first) on top of meat. Mashed carrots on top of veggies. Mashed potatoes on top of that. Then added more cheese and diced green onion on top before baking. It was really good comfort food!

Three Cheese Garlic Scalloped Potatoes

Very rich, but very good recipe. I probably liked it more than the rest of my family. Next time I will still butter dish, but leave out additional butter. Enough fat in the cheese and cream. Fat was starting to rise on the casserole dish while baking. I took a paper towel and tried to soak up as much as I could. Needed to cook longer than specified to finish cooking potatoes. Very good with ham.

Pizza Dough III

Very good. I didn't have bread flour on hand, so used all-purpose. Added some italian seasoning and garlic powder. Added more flour, as it was too sticky without added flour. Turned on oven to 200, then turned off. Put dough in turned off oven for about 40 minutes. Dough just about doubled. Had no problems rolling out on floured counter and rolling pin. Put dough on pizza pan that has the little holes already in the pan. Then put some fork holes throughout the dough and prebaked for 10 minutes at 400 degrees. Pulled out of oven and then added sauce, pepperoni and cheese. Put back in oven to brown. Pizza dough had a great taste. Was not crispy, but the taste made up for the difference. A pizza stone would probably make a crispier crust. Used Easy Pizza Sauce I from this site. It was a good combination.

New York Cheesecake III

Very good cheesecake and this was my first time making one. After reading the reviews, I decided to make a few changes based on what I had read. Used slightly less than 1/4 cup of heavy cream and then added 1/4 cup of sour cream which I added with the eggs at the very end (to not overbeat and add too much air). I also added a little sweet lemon with some zest and some vanilla to the creamed mixture. When making the crust I used a heaping 1/3 cup of sugar (a little more than stated) plus a dash of cinnamon and a splash of vanilla in the crust. I baked the crust for only 12 minutes. It came out great. Glad I didn't opt to use a graham cracker crust. I did have one small crack. Not sure why, but it didn't look too bad and the taste was great. Based on the reviews, I decided to bake at 215 and I left it in about 10 minutes longer. Since it was my boyfriends bday, I wanted to make it extra special. I used some of Costco frozen berry blend to make a nice sauce. First I made a simple sugar sauce on the stove. Then added a big handful of thawed berries. Smashed them in the simple sugar sauce with a potato masher. Added some of my moms homemade grape jelly. Cooked a little longer before adding some cornstarch that I mixed with cold water. Cooked until thick. Added more mixed berries to this mixture before putting in the fridge to chill. I put this on top of the cheesecake and then a dollop of homemade whipped cream. Yummo! Looked like a professional dessert!

Slow Cooker Spicy Black-Eyed Peas

Very good. My boyfriend who said he didn't like black eyed peas, is now a fan. I used chicken stock instead of water and a boulion cube. Also added a splash of tabasco sauce and a pinch of crushed red peppers (we like spicy foods). Made it in the crock pot before I went to bed for a yummy meal on New Year's Day. Try it..you'll like it! :-)

Bill's Blue Cheese Dressing

Great recipe. Been making it for several years. Used 5 oz of blue cheese because that's what was in the container and I hate to waste. Used fresh garlic instead of powder and also added fresh parsley, some fresh lemon juice and a splash of apple cider vinegar. Yummy!

Stir-Fried Vegetables

Great recipe. Wanted to use what I had on hand rather than going to the store. I used Costco's frozen stir fry vegetables (which I defrosted in a strainer to remove as much water/ice as possible)and it turned out fabulous. Also, used all chicken broth and no water. Added a little crushed red pepper for an added zing. Let it sit in the chicken broth for awhile. Was out of ground ginger, so grated some fresh ginger and it turned out fabulous.

Easy Garlic Chicken

Incredible meal! As always, I look at the reviews and tweak recipes. Here's what I did. I used half seasoned bread crumbs and half panko crumbs (2 cups was way too much I found out). I seasoned them a little more with some Italian Seasoning, some fresh shredded parmesan cheese, a little red pepper flakes and a some salt/pepper. For the dipping mixture, I used half oil and half butter with about 9 garlic cloves. I seasoned each breast with a little salt/pepper before dipping in the oil/butter mixture. After dipping in the bread crumb mixture, I placed them in a lightly greased baking dish and scraped the leftover oil/garlic mixture on top of the chicken. I then placed in refrigerator until later that evening. I think sitting in the oil/bread crumb mixture for awhile to marinate enhanced the flavor. Later, I lightly browned in a little oil/butter. Then put back in the baking dish to bake at 375 covered for about 20 minutes. I removed cover and placed freshly grated parmesan cheese mixed with some Italian seasonings on top. Put back in the oven for a little while longer until done. It was incredible served with stir fry veggies and wild rice. Will definitely be making this again. I recommend to you, however, you must love garlic to be a fan of this recipe. Enjoy!

Beth's Spicy Oatmeal Raisin Cookies

My son loves these cookies! I used 1 tsp. of nutmeg. I cooled cookies well before putting into tupperware, but they still didn't hold their shape. It could be because I used all butter instead of half shortening. The taste more than made up for the cookies that ended up in strange shapes after being in the tupperware. I baked 9-10 minutes depending on which type of pan I used with each batch. Great recipe!

Egg and Sausage Casserole

Great recipe. Baked the crescent roll for 7 minutes before adding the other incredients. Used 9 eggs and only 1 cup of mozzarella and 1 cup of cheddar. After about half way baking, I sprinkled a little more cheese on top. I also added one drained canned of mild green chiles, a little salt and black pepper to the egg mixture before placing in pan. Great recipe for when you have company over for breakfast. Much easier than cooking eggs and sausage seperately. Enjoy!

Erica's Delicious Slow Cooker Beef Roast

Home run at my house. Seasoned the flour with salt, season salt, plenty of ground black pepper, garlic powder and Italian seasoning blend before browning the roast. Added 1/2 package of onion soup mix to the top of roast after placing mushroom soup on top. Added a little water and a couple of splashes of red wine. Also, included two bay leaves in crock pot. Excellent. Made my BF very happy. :-)

Awesome and Easy Creamy Corn Casserole

Great recipe for BBQ or Mexican food. Did not use any of the canned juice from whle kernel corn. Only used 1/2 c. sour cream, but added 1/2c. buttermilk and 1/2 c. cream cheese (blend buttermilk, sour cream and cream cheese together). Also added 1/4 c. white sugar, 1/2tsp. salt, 1/2 tsp. pepper and green chiles. Made earlier in the day and refrigerated. Pulled out of refrigerator about 45 minutes before baking to let it come to room temperature in 9x11 pan. Baked closer to 1 hour before it was golden brown on top. Was absolutely wonderful! More like a sweet, spoon corn bread.

Restaurant-Style Coleslaw I

Does taste just like the cole slaw from that famous fast food chicken joint. Doubled the sauce recipe because it was just too good. Made the dressing the night before adding vegetables, so sauce ingredients could blend together. Next morning, I shredded a head of green cabbage, 1/3 head of red cabbage, a carrot and a little bit of green pepper and mixed with cole slaw dressing. I did not use the 1/4 cup of milk and it was not missed. Probably would of made dressing too runny. This is a fabulous dressing!
