Big-Batch Butterscotch Cookies

I added a bag of chocolate chips, a half bag of white chocolate chips (that is all that were in the bag at the time) and some chopped walnuts. My husband took them to work for the garage and they were gone in 20 minutes. A real hit and they are asking for more.

Tender Chicken Nuggets

I, too, use the beaten egg before dipping in crumb mixture. And instead of the ranch dressing and all the seasoning I just add a package of dry ranch dressing & dip mixture along with the cheese and crumbs. Since I cook for many meals ahead, I also double the cornflake crumbs and use a 3# bag of chicken tenderloins, freezing and vacuum packing for other family members later.

Peach Bread

This was a very good basic bread, very moist. I followed the recipe exactly with the exception that I used fresh instead of canned peaches. I think in the future I will add another peach or two since we tend to lean toward a more powerful flavor punch.

The Very Best Spaghetti Sauce

Very good! I left the ricotta cheese out and add that to the sauce on the noodles. It makes a lot; there are several containers in the freezer ready to reheat for a quick meal.

Ribs Fantastic

These were very good. I cut the recipe in half - not a wise choice for the sauce ingrediaents. The time to bake was too long with reduced sauce to cover. I would make again - hubby enjoyed it!

Persian Shish Kabob

This has a wonderful flavor! The only modification I made was reducing the salt because we are on low sodium diets. Instead of chopping the onions, I cut them into chunks and added them with the meat to the marinade. I placed all in a plastic bag, expelled the air, and sealed it. I placed the onions on the skewers along with other veggies. Next time I will marinate some vegetables, too!

Italian Pasta Salad

This is a good basic starter recipe. It has potential to be adapted to personal tastes by adding ingredients. I mixed cheeses (shredded cheddar and mozzarella) and used a little less dressing because I dislike the oily after effects. I added Italian herbs to replace flavor that may be compromized by reducing dressing. It would be great with grilled chicken strips and cherry tomatoes added, too. Very versatile.

Grilled Zucchini II

This was great! I put the dressing in a zipper plastic bag with the zucchini sliced lengthwise to marinate. Expel the air and I don't have to turn. I sprinkled Italian herbs on before grilling, and Parmesan cheese after.

Tangy Sliced Pork Sandwiches

Very good and a great use for leftover pork! I put the pork in with all the ingredients and shredded it as it heated rather than cubes. Our personal preference. I will fix this again!

Potato Soup Mix

Great taste! I used low sodium boullion to reduce the salt instead of changing seasonings. I keep it on hand for cool days or for camping. Nothing easier than this!

Baked Fruit Dip

Great recipe! I just served this at a party and everyone loved it. I used tart fruits to dip. Only change I would make is to chop cranberries first so they are easier to get to with the fruit. This is a keeper!
