Homemade Italian Turkey Sausage
Not a dead ringer for the Jenni-O sausage, but passible. Used quite a bit of fresh minced garlic, 1 T fennel seed ground in spice grinder, 2 t Splenda (too much, do NOT double the sugar component!), omitted the salt and this was a mistake...definitely needs salt, 1 T Italian seasoning, 1 t onion powder, sprinkle of red pepper flakes. Next time I will use the original amount for sweetner and .5 t salt. I am trying to cut down on salt, but no salt was a bad idea. I would also add more red pepper flakes...maybe .25 t? I don't like very spicy food. All in all, can't complain for basically 1/2 the cost of prepared italian sweet turkey sausage.

Cucumber Salad I
Used cucumber, red onion, splenda and rice wine vinegar. omitted water and salt. all the water does is dilute the flavor. as made very low calorie.

Waldorf Salad II
Used ff mayo. I think low fat would have better. Substituted Splenda for the sugar and pecans for the walnuts. Left the peel on two different colored apples. Would have been better with mini marshmallows. Left out the raisins.
