Pan Seared Scallops with Pepper and Onions in Anchovy Oil

Decreased the olive oil and cooked the veggies first. I love anchovies and I could definitely taste the anchovies in this recipe. I will make this again but you really need to cook the veggies first and decrease the oil.

Greek Pita Pizzas

Worthy of ten stars due to its simplicity and use of healthy fats! I used kalamata olives and overly ripe cherry tomatoes. I loved the red wine vinegar. I had no idea that pita bread could make such a great crust--thanks for posting the recipe.

Ellen's Buffalo Meatloaf

So simple, yet delicious! I cooked the meatloaf in a muffin tin which allowed me to easily freeze the leftovers. The buffalo meat results in a sweeter and very moist meat with much less fat unlike beef. I LOVED IT!

Country House Bed and Breakfast Casserole

Used Texas Toast garlic and cheese croutons and leftover turkey sausages that we had cooked on the grill in lieu of the ham. I cut the skin off the sausage. Easy to prepare and tasty. The mixture was light and fluffy because I increased the milk. I served it with Tabasco sauce, next time I will add cayenne to the recipe.

Baked Shrimp with Feta and Tomato

Fabulous! The best shrimp dish I have ever made. A few keys to a five star dish: 1. Don't cook the shrimp for five minutes otherwise it will be overcooked when you finish baking it. Cook the shrimp until it's light pink and then take it off the stove and out of the hot pan so it doesn't continue to cook. 2. Don't add salt; the feta has enough. 3. Cook the vermouth down then add the tomatoes and cook the tomato juices down as well otherwise it will be runny. Baking will not evaporate the extra juices. 4. The feta won't brown but when it becomes heated throughout, it's done. I also used dried parsley because that's what I had on hand and it worked great. This is a definite keeper. This recipe is so simple yet an impressive date night recipe. UPDATE: I made this again using overly ripe cherry tomatoes and it is so much more elegant. The fresh parsley and tomatoes make it look like an expensive restaurant dish.

The Best Potato Salad

Delicious! I used banana pepper rings and zesty dill pickles which is what I had in the kitchen. Next time I will omit the celery seed, a personal preferance. The peppers and pickles made this a five star recipe. I will definitely make this again!

Sausage Spanish Rice

I used turkey breakfast sausage and I didn't have celery so I omitted it. I am rating this four stars since the cook time was more like 45 mins. Although the rice looked done at 30 mins., it was still crunchy. I also cut the recipe in half and still have 3-4 servings not two. The overall taste really depends on the salsa. I loved the idea but the recipe needs a little work.

Greek-Style Rib Eye Steaks

I loved the simplicity of this recipe. However I wondered if blue cheese, olives, and the seasoning are Greek? Not to my recollection so I went to the Taste of Homes website and looked up this recipe. The blue cheese is an added option, they don't list on TOH. So, as written it is delicious but lesson learned, if the recipe references Taste of Homes, I will double check with their website to verify the actual/submitted recipe.

Delicious! I didn't measure the oregano and red pepper flakes. I also had FF feta that fell apart. I would make this again if I was was looking for a recipe to use use my leftover feta.

Chilled Asparagus Salad

Nothing special. This is asparagus covered with ranch dressing. Since I love the taste of asparagus I was disappointed. I added ground pepper and garlic but I still think this recipe is for those that are trying to cover the taste and texture of asparagus. There are better recipes for asparagus lovers on this website. I won't make this again.

A very versatile recipe--using ingredients on hand, I used bocconchini and green onions. The only changes that I recommend is toasting the bread before and adding garlic. I will make this again.

Reuben Casserole

I put the casserole together the night before so I inverted the recipe (the bread was on top). I used leftover Guinness Corned Beef and Cottage Cheese Bread I which is really dense and both recipes are from this site. I also used Thousand Island Dressing vs. Russian. This is much better than the corned beef/noodle recipes. I would first use the leftovers for a sandwich, then this recipe and the last resort would be a noodle recipes.

Cottage Cheese Bread I

A nice crisp crust and you cannot taste the cottage cheese but the bread is really dense. I didn't have any problems with the yeast like others. I would make this again if I am looking for ways to use extra cottage cheese.

Asian Turkey Burgers

LOVED IT! I mixed everything together the night before and then cooked the burger the next day; it was so flavorful. If you are expecting this recipe to coverup the taste of a ground turkey, you will be disappointed. This recipe truly enhances the taste of the turkey and is delicious!

Dirt Cake I

I made this for my neighbor for April Fool's Day. I did not alter the recipe and it was VERY SWEET! I think that was part of the fun--giving it to my neighbor's kids with tons of sugar. If I make this again, I would decrease the sugar and butter or perhaps replace it with the remainder of the cool whip that was leftover. I lined my flower pot with pink saran wrap and cut the flowers into individual stems and attached them to plastic spoons with green floral tape. It provides a great presentation and not too expensive but it has tons of sugar! Loved it!
