My favorite family cooking traditions
I was raised in PA (Pennsylvania) and I'm sure the locals understand that one... I grew up near Lancaster County--where the Amish reside. My favorite dish is called Hog Maw which has become a family tradition. My Grandmother (Ma) would chop potatoes and cabbage for hours to fill several pig stomachs. Ma would then bake it for hours; it's an all-day affair. As a child, I abhorred the idea, Pig stomach, hated the smell, and refused to eat it. My Mom tried to make a "sausage casserole" once and I of course refused to eat it since I knew it was a pig's stomach based upon the smell; GROSS! However, being in the Army for the past ten + years has changed my life. My first assignment was Korea. I tried Korean food and loved it. So, while I was on leave from Korea and in PA, I finally decided to try Hog Maw and loved it! Now, whenever I am on leave, Ma makes Hog Maw for me. My ENTIRE family knows that when Ma needs to go to the local butcher for a pig’s stomach, Lori’s coming home!
My cooking tragedies
My 1st Thanksgiving in Korea. I invited a college friend to my apartment for Dinner. I bought a 4 lb. turkey. The turkey was frozen when I bought it and although I tried to defrost it in my fridge, on Thanksgiving Day, it was still frozen. So, Thanksgiving morning, I pulled it out of the fridge and put it in my sink filled with water. When I returned home from church, my Korean cat was eating through the plastic and eating the raw turkey! I called Shawn and he told me to cut away the chewed meat and cook it. (What else are you going to do? It’s not like you can go to WalMart!) So, I stuffed the turkey and hours later we ate a turkey that the cat enjoyed first. I guess with all the stress I forgot to add water to the stuffing…We had to throw it away. Shawn didn’t like my creamy mashed potatoes, he prefers chunks and then he said that he hated sweet potatoes. But after one bit, they became his favorite!

Mixed Vegetable Salad
Very Good. My sister couldn't believe that it was a frozen bag of mixed vegetables since the celery, onion, and pepper lead to you believe it's a fresh salad. It stores well overnight. I used less sugar--similar to the Overight Vegetable Salad recipe from this site and used flour vs. cornstarch. It's nice and tangy and is a great salad to make in advance.

Slow Cooker Collard Greens
I used this recipe for the slow cooker method and I used the Kickin' Greens for the actual recipe. I used bacon grease vs. olive oil and sauted the onion and garlic then added two pounds of collard greens. I used a dandoodle (VA/NC seasoned meat), water not chicken broth, and red pepper flakes. After 45 minutes on the stove, the greens were bitter so I added 1T. brown sugar and 1 T. apple cider vinegar. I transferred the greens to a slow cooker and let it sit in the fridge overnight with the dandoodle which provides the seasonings. I cooked the greens on low for 4-6 hours and kept adding brown sugar to eliminate the bitterness. Overall, I probably added 1/4 c. brown sugar and 2 T. apple cider vinegar for the 2lbs. of fresh collard greens. My BIL uses honey vs. brown sugar. Definitely a keeper! Delicious and this slow cooker method does not make the greens turn to mush but I prefer the fresh onions and garlic of the kickin' collard green recipe.
