Spicy Vegan Potato Curry
This is scrumptious! I omitted the cayenne completely, since I wanted my kids to be able to eat it. It was PLENTY spicy without the cayenne. I used 6 potatoes and frozen peas instead of canned. So, so good. Looking forward to the leftovers tomorrow!

Ground Venison Burgers
I like making these with 1 pound ground venison and 1 pound ground beef. And I don't always make the sauce. They are plenty good without it!

Light Pesto
I thought this was an excellent alternative to oily pesto. The only thing I changed was to use parmesan instead of romano (since that's what I had on hand), and added about 1/4 cup water to thin it out a little. I sprinkled mine with crushed red pepper flakes. Yummy!
