Banana Sour Cream Bread
This banana bread is excellent! I had to use a bit of oil as I only had 1/2c of butter and I substituted plain nonfat yogurt for the sour cream. I like that it makes a lot and so do my neighbors!

Mexican Zucchini Cheese Soup
I have made this twice in the last two days! I substituted vegetable broth and left out the cilantro, but those are the only changes I made. I am a Velveeta hater, but in this recipe, it just works. This is an excellent recipe!

Spinach Enchiladas Verde
Absolutely delicious! Like some other reviewers, I layered the whole thing to make it faster and I did not chop the spinach, just layered it on. I also added some sliced green onions and served them with black olives. I had my doubts about this recipe, but I could not get over how something so easy could be so delicious!
