Spicy Rapid Roast Chicken

Very good, had a problem with smoking, but after I added the vegtables to the pan after the first 20 mins it stopped. Next time I will add the veggies at the start, as they were cooked through but not as soft as I like them. Cooked breast side down and it turned out moist and juicy. Love the high heat cooking, the skin was brown and crispy, just the way I like it. Needs an extra 10-15 min cooking time.

Chocolate Frosting III

Did not have chocolate squares so I used 6 tbs cocoa powder and 2 tbs veg oil as another reviewer did and added about another 1/2 to 3/4 more powdered sugar. It separated a bit but after mixing it with the powdered sugar it turned out great. So don't sweat it if it separates while you are cooking it. It works out in the end after mixing. My sister said it was the best she ever had, and I agree with her. Used it on brownies as suggested and they were delicious!!!

Ham with Pineapple Sauce

Used one whole can crushed pineapple and adjusted the cornstarch, everything else the same. I cut up the ham and put the sauce on top and baked until heated through. Turned out great.

Pan-Fried Asparagus

Raspberry Banana Bread

Good bread. Did not have bananas so I used a cup of applesauce and a cup and a half of raspberries. Made it in four small loaf pans, first batch stuck to the pans, so I greased then floured the pans in the next batch. Was nice and moist with raspberries in every bite. Will try next time with the bananas. Don't be thrown off by the grey color, it changes after baking.

Apple Crisp II

Very, very good. Whole family loved it. Followed the advice of other reviewers. Used a 5lb. bag of granny smiths this filled up 9 x 13 pan to the top. Then I did not add water, let the apples and sugar sit for 10 or 15 minutes before cooking. Added a little cinnamon, nutmeg, cloves and ginger to the topping, more butter, one and a half the topping. In the apple mixture, less sugar, 1/2 cup instead of 1 cup, used half brown sugar and half white. Added a little lemon juice to the apple mixture. 1 tbs cinnamon instead of 1 tsp. to the apple mixture. Turned out great.

Tex-Mex Burger with Cajun Mayo

Very good. Cooked the onions and jalepenos in a little oil and then cooled before putting them in the burger. I like my onions cooked and they never seem to when cooked in the burger. Will make again.

Fancy Chicken Salad

Have made this several times now. Yes this does have a distinctive flavor. You have to love the taste of feta cheese or you will not like this one. I do love feta and I love this recipe. Didn't change a thing. Except to add more feta.

Firecracker Grilled Alaska Salmon

Very good salmon. Threw all the marinade ingredients in my blender. Marinaded the fish overnight. Turned out great. Nice and spicy. Had it over the 4th of July while we were blowing off our fireworks. Everyone enjoyed it.

Very good rice. Of course just like everyone else, made it my own. Doubled it and used only 6 slices bacon. Only one onion. Used a can of rotel instead of the tomatoes and green peppers. Added a can of chipotles in adobo. No salt no pepper, plenty spicy. Turned out great.

Great soup, just needed more broth. Added a can of italian diced tomatoes and a extra small can of tomato sauce with two cans of water. Used beef broth instead and made little italian meatballs. Frozen green beans too. Turns out great every time. Love, Love, Love this soup!!!!!

Roast Sticky Chicken-Rotisserie Style

Delicious chicken!! Followed others advice and added more garlic and onion powders. Used half the salt so that I could baste with chicken broth every half hour. Cooked it breast side down and on a rack. Was not dry at all in fact it was very tender and juicy. The broth and chicken juices made a very good gravy.

Cheesy Ham and Hash Brown Casserole

Good recipe, mix the ham, cheese, sour cream and soup together first, then mix in the hash browns when they are still frozen if possible, makes for easier mixing.

Delicious Ham and Potato Soup

Very Very Good!! Great flavor. No major changes, except to add a carrot and a can of mushrooms. Plus I used two cans of chicken broth instead of the water and chicken bouillon granules. Liked it a lot. Will make again. Thanks for the great soup recipe.
