Black Bean And Corn Salad II

This was really good!! We had it with quesadillas and they were delicious with a big scoop of this salad on top. It's also great as a salsa. Definitely a recipe I'll make a lot, especially for summer BBQs.

Cajun Chicken Pasta

This was SO delicious and full of flavor!! I was a bit confused by the "2 chicken breast halves" and assumed that meant one full breast...? I did not change anything, except that I omitted the onions (don't like them) and mushrooms (forgot to buy them) and I was short on heavy cream, so I supplemented the rest with Vitamin D milk that I mixed 1tsp. of cornstarch into to help keep it thick. Worked perfectly. Next time I will probably cut down on the butter a bit I would definitely say to tone down the cajun a bit if cooking for those who don't like spicy. We LOVE spicy and it was perfect as was for us. Definitely a keeper recipe!!

Layered Chicken and Black Bean Enchilada Casserole

As I was dishing this up I plopped it down on the table, frustrated that I had just spent precious time making this dinner, because it did not look very good and looked very dry. Then I tasted it! YUM!!!! It was delicious and very flavorful and my husband and I both loved it. I will definitely be adding it to my rotation. The only things I did different was add a bit of chili powder and garlic powder to the chicken mixture and I used flour tortillas that I crisped a bit in the oven first.

Hot Fudge Ice Cream Bar Dessert

YUM!!! I halved the recipe, which made 9 servings and I tweaked it just a tad, simply because we were specifically in the mood for something really chocolatey/peanut buttery. I omitted the peanuts and added crunchy peanut butter and peanut butter cups. So my layers went...IC sandwich, crunchy pb, chocolate/pb mixture, cool whip; repeat and top with chopped peanut butter cups. Mmmmm. SO good and perfectly chocolatey/peanut buttery!! I will say that it is much better the longer it's frozen. Mine was in for 3 hours before our company came and it was frozen, but still kind of softly frozen. I would give it at least 5 hours next time.

Peanut Butter and Banana Smoothie

This was delicious! Although I'm giving it 4 stars because I did make a number of minor changes. I used regular milk (it's what I had), used a frozen banana for better consistancy, omitted the honey (too sweet for me) and I added 1/4c. oatmeal for some extra nutrition. For a special evening treat, some chocolate syrup would also be a fun twist!

Pizza On The Grill I

Very good! My only complaint is that we cooked it on our charcoal grill, following the directions to use high heat and burned the bottom pretty bad. And because we had to then get the pizza off so it wouldn't burn more, the pizza wasn't very hot and some of the cheese did not melt. We also had a problem with flames after brushing the grates with oil, which also contributed to the pizza burning. Next time we'll wait to put the pizzas on until the flames completely die down after brushing grates with oil (or spritz them with a spray bottle) and possibly even brush the coals aside so the pizzas cook over indirect heat. We'll also make sure to have LONG utensils for spreading on the sauce/pesto, as the grill was too hot to have your hands down there brushing it on.

Best Steak Marinade in Existence

Yum! Also very delicious quick-marinade for the mushrooms. After throwing the steaks on the grill, toss the mushrooms in the marinade for 5 minutes and then saute until nicely browned. SO good!!!

Monkey Bread I

I reduced the recipe to 5 servings (ratio for 1 can of biscuits) and they were delicious, except that for some reason they turned out very dry for me. There was not near enough gooeyness. I cannot figure out why though, as my husband is actually the one who put it together while I was doing something else. He looked at the recipe again though and swears he didn't forget anything, so I don't know. I'll definitely try again though. The flavor was great!

Bacon and Tomato Cups

I've got to say, I didn't love these. I did omit the onion because I don't like it and perhaps that had something to do with it, but I just really didn't care for them. In fact I took them to a cookout that was all finger foods and my dishes are typically the ones gobbled up the quickest, but there were a number left over tonight. They were good, but nothing great.

Best Fried Green Tomatoes

Wonderful!! We loved these. The only thing we did different was add some hot sauce to the egg/milk mixture and some cayenne to the cornmeal/bread crumb mixture, because we love them spicy. We plan to use the leftovers tomorrow for BLTs. I did have a ton of egg left over, so next time I will probably only use one egg and crack another if need be.

Cajun Style Baked Sweet Potato

These are excellent! I threw it all in a large covered tupperware bowl, added the oil and shook it up to coat, then added the seasonings and shook again, which was quick and coated them perfectly. I do not care for herbs much, so I omitted those. Other than that the only thing I did different was cut them into strips/fries so they would cook faster, and I turned on the broiler for the last few minutes to crisp them up a bit. The flavor was delicious! Just watch them when broiling so they don't burn!

Taco Seasoning I

This was delicious and definitely a recipe I will begin using often. I used it in the Burrito Pie recipe on here a few weeks ago and it was excellent. Tonight I used it for tacos and it was once again excellent. I cooked up the ground beef and drained it, then added it back to the pot with 2T. spice + 2/3c. water (roughly) per pound of meat and simmered for about 20 minutes before serving.

Penne with Chicken and Pesto

I've got to be honest, we were not fans. I give it 3 stars because I think it has potential, but we felt like the chicken was pretty bland and when the recipe is pretty much chicken and pasta, flavor in both is key. If I ever try this again I'll definitely add some more flavor to the chicken and add some veggies or something.

Penne Pasta with Spinach and Bacon

I wouldn't call this "gourmet" but it was definitely delicious!! I followed the recipe as is, except for wilting my spinach right in the tomato mixture before adding the pasta. It helped with flavor and wilted just fine. I also topped with grated parmesan/romano. Halved the recipe and it was perfect for two of us. Great recipe!

Toasted Garlic Bread

This was great. I scaled it to 4 and the garlic butter mix was just enough to spread 4 pieces of bread. Next time I think it needs a bit more garlic (I did one larger clove and one smaller one...I'll do 2 good sized cloves next time for this scaling). I also will add more salt next time, as I didn't add enough this time (my fault). I also omitted the oregano because I am not a fan, but next time I will add something...either oregano or parsley or something. Definitely a delicious recipe though! YUM! P.S. Broiler on low instead of high...or bake on 375 for 10 minutes for a crispy top AND bottom and use a pan with sides!

Teena's Spicy Pesto Chicken and Pasta

I've got to say, we really didn't enjoy this dish and I was surprised because we are usually always thrilled with the dishes I've made from AR, as I typically choose higher stars with a lot of ratings, but we found this to be pretty bland, especially the chicken. I won't be making it again. I'm bummed!

Rated G Mexican Coffee

I'm rating this 5-stars because I've actually never had Mexican coffee so I am not 100% sure what it's supposed to taste like, but I would imagine this is a great version of it! It is delicious, although I must say I think it must be an acquired taste. It's a very strong flavor. I scaled the recipe to 2 and because I did not have whole cloves or cinnamon sticks I used a little less than 1/4t ground cinnamon and a few shakes ground cloves. Good recipe.

Super Al's Cocktail Sauce

Jalapeno Pepper Appetizers

These were excellent and everyone raved!! Next time I may try cooking the bacon for a short time in the microwave before wrapping the jalapenos, just to give it a head start and to help it cook faster. It did take quite a bit longer than the time listed for the bacon to get crisp. I also may try adding some dry ranch (1/2 packet) or garlic (2t) and cajun (1T) to the cream cheese (or Neufchâtel for lower calories) and may even serve them with ranch dressing for dipping. Definitely a keeper though!
