Mall Pretzels

Eh. I didn't think these were great. I thought they were somewhat bland and kind of tough instead of chewey...and I definitely didn't overcook them. Will try another recipe next time. My favorite topping was actually probably garlic salt. (I did cinnamon sugar, garlic salt, and kosher salt). I also may do sticks next time instead of the regular pretzel shape. It would make more and would be easier for the little ones to eat.

Refried Beans Without the Refry

These turned out perfect and were really good!! I did end up adding much of the liquid back in after mashing up the beans because they were pretty dry without it. Definitely a keeper!

Garden Veggie Pizza Squares

These were really good, though I'd recommend a few things prep-wise...1-Make sure to pat the crust down with a spatula half way through baking or your crust will not be flat and will have big bubbles in it. 2-Don't roll it out too big or your cream cheese spread will not be thick enough to give pieces enough flavor (or just make another half batch of the spread...I did a jelly roll pan and the original amount spread super thin) and 3-Dice the veggies super small (pea size) and press them down into the cream cheese a bit, so they don't all fall off when serving. 4-I agree with many reviewers not to assemble the pizza until about an hour before so it doesn't get soggy. I just diced all the veggies ahead of time so they were ready to throw on when time to put it together.

Chocolate Chocolate Chip Cookies I

Crepes

These were good and I am not exactly sure how to rate them because this is the first time I made them and it was also on my brand new cookware. The edges crisped up quite a bit, but I am thinking it was because my skillet is so big, that 1/4cup of batter didn't spread enough and therefore made the edges very skinny. Next time I am going to try making them on the bottom of my pans, as my cookware's cookbook suggests. Flavor-wise, they were okay. Nothing great, but good. I need to try them again to give them another chance before I'll adjust the rating more.

Antipasto Squares

I thought these were really good, but not absolutely great. However everyone else at our party was loving them. I have to say, the crescent roll sheets (instead of the divided rolls) are so awesome for recipes like this!

Slow Cooker Carnitas

This was one of the most tender meats ever!!! De-lish!!! I only had a 2.5lb. cut of shoulder, but kept the 10 serving measurements for all of the other ingredients (except the cinnamon-I halved that) since a lot of people said they doubled the spices. We thew in some BBQ sauce for pulled pork sandwiches one night and made enchiladas the next night with refried beans, the meat, cheese and enchilada sauce and they were delish. I will definitely be using this from now on for my pulled pork and I want to try chicken soon!

Avocado Feta Salsa

Oh my word is this good!!!! I made it exactly as written (except for using onion powder in place of fresh onion and dried parsley and oregano) and my husband and I are about to eat the entire thing instead of sharing with friends tonight!! Addicting! Although I'd definitely say this serves 4, maybe 6, but definitely not 12.

Spinach and Feta Pita Bake

Very tasty and super quick! I used regular pesto, because it's what I had. The only thing I would do different is probably add some shredded Italian on top of everything, to help everything stay together better. It was kind of humorous to eat because everything was falling off. So delish though. My husband loved them and my daughter also ate them without complaining (too much).

Thousand Island Dressing II

This was okay, but REALLY sweet for our taste, and I even cut the relish in half. Next time I'd half the relish and the relish....I may even try dill relish. Used it on Reubens.

Guinness® Corned Beef

Loved it! I will say that it was a tad sweet for our preference, but that's personal preference. We also did add another beer so that it just covered the meat. PERFECT for Reubens too! And we thought the serving ratio was a bit high. I would plan on 1/2lb. per person because corned beef shrinks down quite a bit. We did a 3lb. cut and it was just enough for 4 of us to eat for dinner (with potatoes, carrots, cabbage and bread) and 2 Reubens the next day.

Mexican Chicken Corn Chowder

We loved this!! It was quite easy and absolutely delish. I used 3 chicken breasts, added some frozen corn, used a can of Rotel in place of the fresh tomato and chiles, and we added the hot sauce to our bowls so it wasn't too spicy for my daughter. It was also awesome with a squeeze of fresh lime. I think next time I'd even add some diced carrots. Definitely a new fave! Served with our favorite AR Guacamole recipe and lime tortilla chips.

Basic Crepes

These were good for savory crepes, but I wouldn't say amazing. I did, however, make the mistake of trying to cool down the melted butter by adding the milk to it...what I was thinking, I have no idea, because it curdled the milk a tad (stupid!). In the end, it all worked fine, but that definitely wasn't ideal. We made savory cuban crepes...pulled pork, ham, pickles, cheddar, mustard and hot sauce. So good! We also tried to add some sugar and vanilla to the second half for some sweeter crepes, but next time I would just use a sweeter recipe (I've head the Vanilla Crepes recipe is awesome).
